A number of Game of Thrones clones go even further than Game of Thrones in stripping away fantasy elements to make it Gritty and Serious. At the end of the day, no matter how much of a deconstruction it is, it's still a fantasy story driven by dragons, magic, and non-human races

Final Fantasy VII is a pretty dark story - beginning in one of the bleakest cyberpunk dystopias ever depicted, and ending with the (somewhat accidental and nixed by the sequels, but still) implication that humanity goes extinct - and it still has a red wolf who is on fire as one of its main characters. And he's presented dramatically. You can do whatever you want all the time and make it "serious"
