Cant concentrate on work today bc all i’m thinkin about is a new ACNH island called “Ohio” and its completely flat and planted top to bottom with corn and wheat and like one lonely road with electric poles for the shops to sit on. All the villagers are farm animals. Its the stupidest shit but I want to do it so bad lolol.

🌻🍋🥧 Meringue Lemon Pie 🥧🍋🌻
I made this pie recently and it's 🔥🔥 da bomb 🔥
I adapted a pie crust recipe for this 80's cookbook, used my mom's favourite lemon curd recipe and classic meringue to make a delicious, gluten free, made from scratch meringue lemon pie !
🥧 Pie Crust 🥧
•200g of all purpose flour (to make it gluten free, I used 65g of gluten free baking flour - Schar's mix -, 65g of buckwheat flour and 70g of almond flour)
•100g of cold butter
•a small glass of cold water (I found it to be something like 10cl but don't hesitate to add it progressively until you think it's enough to form the dough)
•30g of sugar
Mix together the flour and the sugar in a large bowl. Add in the butter cut in small pieces with the tip of your fingers until you have a sand texture. Make a well in the center of the bowl and add the water. Mix with the tip of your fingers and knead a little until you have a nice ball of dough. It should hold together and be a little sticky but not too much. Let it rest for at least 30 minutes before baking it. Meanwhile, you can prepare your lemon curd (and preheat your oven -180°C- if it needs time).
🍋 Lemon Curd 🍋
•4 lemons (organic is better)
•100g of butter, diced
•200g of sugar
•4 whole eggs
Grate the zest of 2 lemons and extract the juice of 4. In a large, heat resistant bowl, mix together the zest and juice and all the other ingredients. Place the bowl over a steam bath and cook for around 20 minutes or until the mixture begins to thicken (though when it starts thickening you want to keep going for a few minutes), stirring the whole time (this can be a bit tedious, I've read you can do it with a cooking robot but I haven't tried yet ^^ just watch an episode of a serie of something idk). Take off the steaming bath when it's cooked. It will be thicker when it's cold.
Let rest and go back to your crust. If you're making it gluten free, I recommend rolling it directly on a piece of parchment paper so it doesn't break when you transfer it into the pan. If not, feel free to use whatever method you like best, when using regular flour I like to just butter the pan and dust it with flour. Poke some holes in the crust with a fork, put some ceramic beans on it so it doesn't rise too much and put in your pre heated oven (180°C) for 15 minutes.

☁️ Meringue ☁️
Meringue is very easy, I promise. You only need egg whites and sugar, 60g of sugar for each white. For one pie, I found that three medium eggs are enough, two big eggs can work, I think. I use my grandparent's hen's eggs, so they vary in size and are not as big as what some of you may find in stores ^^
Beat the egg whites until it's nice and fluffy, and start adding in your sugar. You want to add a third of your sugar each time and wait until it's completely incorporated before adding more. You want to reach stiff peaks point, which means when you take the whisk out of your meringue it should form stiff peaks that hold in shape and be visibly thick and glossy. And that's it, that's all, you got yourself a nice, old school french meringue (and trust me, I'm French and I love meringue xD)
[You can use this recipe to make meringues, just dump spoons of your mixture on a baking tray lined with parchment paper and bake in a oven preheated at 100°C for 1 hour of more depending on your taste (weither you like your meringue to be soft and chewy on the inside -my personal choice- or super crunchy. It also depends on your oven). As for baking meringue you should experiment, see what you get, and keep an eye on it too. It will never be a total fail anyway !]
But that's not what you're going to do with it today. Today you're making a lemon pie and you're going to assemble it !
When your pie crust has cooled, fill it with your lemon curd and top it with your meringue. I used a piping bag but my mom likes to put it with a spoon, flatten it and draw a spiral with a fork. It's really up to you. Just pop in under your grill until it's a nice golden brown (it's fast). If you don't have a grill, you can put it back in the oven for around 5 minutes or until it's golden brown but it's not exactly the same (it's good too though !)
You can eat it while it's still warm, it's delicious, but it will be hell to serve it properly. I recommend letting it cool and store it in your fridge until it's set. It's still good for two days after making it but I wouldn't think there will be any left after the first day because it's freaking amazing.

If you’re a minecraft fan and a lord of the rings fan and Don’t know about Minecraft Middle-Earth, one of the longest-running massive build projects that’s been going on for almost 11 whole years working to recreate all of middle earth to scale in minecraft, then you’re really missing out on some of the coolest shit out there. MC originally raised the build height limit for the first time in part because of MCME iirc. They needed the world height raised for the two towers and MC delivered. I’ve been following this project since day one and it never ceases to take my breath away. Have some screenshots! and, yes, this was all built in minecraft.

minecraft 1.12: more color than ever is brought to minecraft! parrots can be found in the jungle now!
minecraft 1.13: life has returned to the ocean! dolphins and fish and corals and sea pickles and vibrance!
minecraft 1.14: the villagers are remembering their culture and their craft! they’re more advanced than ever!

minecraft 1.16: there’s even life in the nether now! a somewhat-thriving society of piglins is there, there’s animals like striders and hoglins, and even forests of fungi!
minecraft 1.17: life is even occurring deep underground! axolotls are swimming around in the caves, new plantlife can be found stored away, and beautiful geodes adorn the underground!
minecraft 1.18: horror and evil and darkness. giant gashes in the world and looming mountains. hideous monster at the bottom of the caves. fucked up evil slime that wants to hurt you. kill kill violence murder kill
