Much joy recently to read the international James Suckling Wine Ratings for Australia, which happily featured Amato Vino front and centre. . There’s a story here. . Barrel 130562 was a goodie. When it was retired from winery use in January it was dismantled for repurposing. Among many things, I made this pasta rack. Two of the wines that spent a lot of time in 130562 were the 2017 Cabernet and 2019 Teroldego, pictured here, awaiting dinner. . The food? The eggs for the pasta came from chooks cared for by friends and artists @sarah.scheltema and @ian.thwaites26 (check out their work). The bacon from David Hohnen’s @thefarmhousemr, the passata from homegrown San Lorenzo from the @amatovino vege patch. . So many connections, so much local. 🟠 L O S T O N M A R S 🟠 . 🚀 This Mars mission is our annual Marsanne collaboration with @bluepolesvineyard - they provide the grapes, we do the footstomping, and the bounty is shared. . It’s a roughly 30% skin ferment giving the wine some added texture and phenolics on the palate, and a little extra spice in the aromatic department. . The skinsy bit goes into amphorae for a week or so before pressing and rejoining the mothership. . Look out for the 2021 Lost On Mars later in the year.
