Use one teaspoon of garlic powder and 1/2 teaspoon red pepper flakes. 2 cans of tomato paste (for a thicker broth) and use canned green beans cause they taste better :P

So I am continuing to work two jobs and generally be stupid busy while MyDadHasCancer.exe is also constantly running in the background of my mind and eating up an enormous amount of mental resources. Which is making it hard to stick to a lot of the healthy habits I worked so hard to cultivate last year. In particular, grocery shopping and meal planning currently feel extremely overwhelming to my already overtaxed brain.
But also my body has gotten used to getting non-negligible quantities of things like fruits and vegetables and protein on most days, and if I don't continue to supply them I start to feel like garbage VERY quickly. (And also also I have a little more money to throw around than I previously did, but certainly nowhere near enough to go back to my younger and more dysfunctional self's habit of subsisting mostly on snacks and delivery meals.)
Every time I think about making a meal plan for the upcoming week and then going to the store and buying and prepping a week's worth of meals my brain just shuts down. So this morning I got up and just started pre-prepping everything in my cabinet and corner of the fridge. Not meals, just...individual ingredients. Hard boiling eggs. Cooking a batch of plain rice. Pressing some tofu to slice and bake in the oven. Chopping vegetables to cook later.
What am I going to cobble together out of these various components once I have them? Unclear. I can't think that far ahead right now. But I can boil water for rice.
Anyway, this is a new strategy for executive dysfunction cooking I've just discovered. If you know how to cook on a basic level but your brain is currently way too overtaxed to plan out meals in advance, maybe this will also help you.
