as promised…my moms recipe for a protein chocolate muffin (makes 6) <3

Ingredients:

• 3/4 cup (75g) almond flour

• 1/2 cup (50g) unsweetened cocoa powder

• 1/2 cup (50g) chocolate or vanilla whey protein (she used chocolate for the one that i posted)

• 1 tsp baking powder

• Pinch of salt

• 3 eggs

• 1/3 cup (80ml) unsweetened almond milk

• 1/4 cup (60g) Greek yogurt (she used zero sugar chobani, more protein less calories)

• 1 tsp vanilla extract

1. Preheat oven to 350°F (175°C) and line a 6-cup muffin tin.

2. Mix almond flour, cocoa powder, protein powder, sweetener, baking powder, and salt.

3. In another bowl, whisk eggs, almond milk, Greek yogurt, and vanilla.

4. Combine wet and dry ingredients until just mixed. Fold in chocolate chips if using.

5. Divide batter into muffin cups and bake 18–20 min, until a toothpick comes out clean.

6. Let cool slightly before eating.
