Mouth-watering Beef & Pumpkin Stew
Who doesn’t love a good hot stew on cold winter evenings. Here’s a yummy dish made from pumpkin & beef to surprise your family & friends. You may have tried different versions of the beef, and you may have tried pumpkin soup, but if you haven’t tried this combination in a stew, you are seriously missing something. Here’s how you make it.
Creative Text:
Mouth-watering Beef & Pumpkin stew
2 TB spoon #Aditi Coconut Oil
1 Onion, chopped
500g Beef, cubed ( just over 1 pound )
2 TB spoon Flour, seasoned with Salt and Pepper
500g Pumpkin, cubed (just over 1 pound )
1 Large Potato, peeled, cubed
1 can (410g) Chopped Tomatoes
1 teaspoon Sugar
1 cup Beef Stock
3 TB spoon Dry White Wine (or more Stock)
1/2 teaspoon Dried Thyme
Parsley, to garnish
DIRECTIONS:
1.) Heat #Aditi coconut oil in a large pot - saute the Onion until soft - remove the Onion and keep side.
2.) Dust the Beef cubes with the seasoned Flour - brown in the same pot as was used for the Onion.
3.) Return the Onion to the pot and add the Pumpkin, Potato cubes, Tomatoes, Sugar, Stock, Wine and Thyme - bring to the boil then reduce heat and simmer 25 - 30 minutes or until the vegetables are cooked - add a little water if needed halfway through cooking.

Coconut Oat Pilaf
There are so many different ways to include oatmeal in your diet, & here is a very tasty and aromatic way to prepare an oats dish. Its slightly spicy, so you can make it your evening dish or for breakfast, if you don’t mind a little bit of spice in your morning food.
2 tablespoons #Aditi coconut oil
1 ½ cups steel-cut oats (not rolled), rinsed and drained
1 tablespoon minced or grated ginger
1 tablespoon mustard seeds (brown or black are both fine)
3 cardamom pods
1 or 2 dried red chilies, like Thai (optional)
Salt
freshly ground black pepper
½ cup grated dried unsweetened coconut
½ cup chopped fresh cilantro, mint, scallions or parsley, or a combination
PREPARATION
Pour Aditi coconut oil in a pot with a tight-fitting lid over medium-high heat. When oil is hot or butter melts, add oats and ginger and stir until coated. Add spices and a pinch each of salt and pepper; stir until fragrant, just a minute or two.
Stir in 2 1/2 cups water, bring to a boil, and reduce heat so mixture gently bubbles. Cook undisturbed, until most of the water has been absorbed and holes begin to appear on surface, 5 to 7 minutes. Cover, remove from heat, and let sit for at least 10 (or up to 20) minutes.
Meanwhile, toast coconut in a skillet over medium-low heat, shaking pan and stirring until it is toasted and fragrant, several minutes (watch carefully that it does not burn). Toss coconut and cilantro into oats, fluffing mixture with a fork. Taste and adjust seasoning if necessary and serve hot or at room temperature.

Yummy stir-fried sweet potato salad
How about having a fresh and colourful salad for those lazy afternoons? The sweet flavours of this super healthy dish would make a pretty impressive side dish if you are planning to have guests this weekend. Here is the recipe for a nice and crunchy salad.
For the Stir Fried Sweet Potatoes:
Sweet potatoes cut in round slices – 150gm
Marinade:
Curd – 1 tbsp
Ginger garlic paste – 1 tsp
Chilly powder – 1/4 tsp
Jeera powder – 1/2 tsp
Coriander powder – 1 tsp
Pepper – 1/4 tsp
Salt – to taste #Aditi coconut oil - for stir fry
Keep the sweet potato slices marinated in the marinade for 1 hour.
Shallow fry in #Aditi coconut oil till both sides are golden brown and keep aside.
For the Onion-Carrot Salad:
Carrots – 2
Onions – 1, big
Fresh Coriander Leaves – a bunch
Chilly powder – one tsp
Lime juice – of half a lime
Salt – to taste
Cut the onions and carrots into long strips.
Mix in the chilly powder, salt and lime.
Garnish with chopped coriander leaves.
Serve with the stir fried sweet potatoes.

Delicious Penne Paste at home!
Ingredients
12 oz. Penne Pasta
4 Large Ripe Tomatoes
¾ Cup Fresh Basil
¼ Cup Red Onion
1 Lemon, juiced
2 Garlic Cloves
2 Tbsp. #Aditi Sunflower Oil
½ Tsp. Salt
Instructions
Cook penne pasta according to package directions.
While pasta is cooking, dice tomatoes, basil, and red onion.
Place in a large bowl.
When pasta is done cooking, drain, and immediately add to bowl.
Stir in juice from lemon, minced garlic cloves, #Aditi Sunflower Oil, and salt. Toss well to combine.
Serve warm or at room temp.

Masala Mathri
Masala Mathri is a crispy and flavourful Rajasthani snack dish that you can enjoy with tea. So if you are in the mood to make something special for your kids in the evenings, you can try this one. Through the snack is generally made of maida, you can make it with Aditi whole wheat atta to make it healthier & more nutritious.
1 cup #Aditi whole wheat atta
1/4 tsp carom seeds (ajwain)
1/2 tsp cumin seeds (jeera)
1 tsp chilli powder
1/2 tsp freshly ground black pepper (kalimirchi)
1 tbsp melted ghee
salt to taste
#Aditi coconut oil for deep-frying
Method
Combine all the ingredients in a deep bowl and knead into a stiff dough using enough water.
Divide the dough into 5 equal portions.
Roll out one portion of the dough into a 100 mm. (4”) diameter circle.
Pinch the edges of the rolled mathri to form a design.
Prick the mathri with a fork at regular intervals.
Repeat steps 3 to 5 to make 4 more mathris.
Heat the oil in a deep non-stick kadhai and deep-fry 3 mathris at a time, on a medium flame for 8 to10 minutes or till they turn golden brown in colour from both the sides.
Drain on an absorbent paper.
Repeat step 7 to deep-fry 2 more mathris in one more batch.
Serve or store in an air-tight container

Cookie fun - Egg in the middle muffins
Muffins are super delicious, and there are so many different ways to make them. Here is a mouth-watering egg in a muffin recipe that you would enjoy making. Go ahead, whet your insane love for muffins, & make yours at home.
1 cup all-purpose flour
1/2 cup #Aditi whole wheat atta
1/2 cup cornmeal
1 1/2 cup grated sharp cheddar
3/4 cup chopped ham
1 tbsp sugar
1/2 tbsp garlic powder
1/2 tbsp onion powder
2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
1/4 tsp ground black pepper
wet ingredients
3 tbsp - unsalted butter, melted
3/4 cup - milk
1/4 cup - greek yogurt
2 large eggs - lightly whisked
the eggs that go "in the middle" of the muffins
- 9 small to medium eggs
DIRECTIONS:
Preheat oven to 350ºF. In a bowl, combine all dry ingredients. Make a well in the center and add in wet ingredients. Mix until the batter just comes together. Fill 9 muffin tins halfway full of batter. Then use a spoon or your fingers to make a well in the center of the muffin tin. Now crack an egg into each. When you crack your egg into your batter well, the egg might kinda go everywhere. Once you got your eggs cracked in the center of the muffins, top each egg with some more muffin batter. Now top with a bit more grated cheese. Bake for 20-25 minutes, until muffins are just turning golden brown on top. Let cool 5 minutes in the muffin tin.

Here is a simple recipe for Orange Juice Cake, a super moist version, and bursting with orange flavour. It’s easy and super yummy. A slice of orange juice cake with a cup of hot tea/coffee makes it divine. Delicious Orange Juice Cake 1 Box Vanilla Cake Mix 1 Box Orange Flavored Jello 3/4 cup #Aditi Sunflower Oil 1 cup Fresh Orange Juice 4 Eggs Glaze: 1 cup Icing Sugar 2 TB Fresh Orange Juice Finely grated Orange Peel 2 TB Pistachio Nuts, choppedDIRECTIONS: 1.) Pre-heat the oven to 180 deg C (350 deg F) - spray a bundt pan with #Aditi sunflower oil. 2.) Combine the Cake Mix, Jello, Oil, Orange Juice and Eggs in a mixing bowl - beat 2 minutes, scraping the bowl regularly, and pour into the prepared pan - bake 35 - 40 minutes or until springy when you touch the cake. 3.) Remove from the oven - let stand 5 minutes, then turn out onto a cooling rack to cool completely. 4.) Glaze : Beat together the Icing Sugar and the Orange Juice until smooth - drizzle over the Cake and sprinkle with Orange Peel and Pistachio Nuts.

Nutty-flavoured Whole wheat buttermilk scones

You must have tried those sweet scones in coffee shops, haven’t you? Here is a different, and yummier version of scones, made with moderate level sweetness and Aditi whole wheat atta. Top the scones with jam or honey to make it yummier than ever. These scones can be had as a nourishing breakfast food/evening snack.
150 grams (approximately 1 1/4 cups) Aditi whole wheat atta
62 grams (approximately 1/2 scant cup) unbleached all-purpose flour
40 grams (approximately 1/3 cup) oatmeal
10 grams (2 teaspoons) baking powder
5 grams (1/2 teaspoon) baking soda
25 grams (approximately 2 tablespoons) raw brown sugar
3 grams (approximately scant 1/2 teaspoon) salt
70 grams (2 1/2 ounces / 5 tablespoons) unsalted butter
125 grams (approximately 1/2 cup) buttermilk
75 grams (approximately 1/2 cup) raisins
Preheat oven to 400 degrees. Line a baking sheet with parchment.
Sift together flours, baking powder, baking soda, sugar and salt. Stir in oatmeal. Rub in butter, or place in a stand mixer fitted with the paddle and beat at low speed, or pulse in a food processor, until incorporated. Add buttermilk and raisins and mix just until dough comes together.
Transfer to a lightly floured work surface and gently shape into a 1/2-inch thick rectangle. Cut either into 2-inch circles with a biscuit cutter or into 6 squares, then cut each square in half on the diagonal. Transfer to baking sheet. Bake 15 minutes, until browned on the bottom. Flip over, bake 2 more minutes, and remove from the heat. Serve warm or allow to cool.

Sweet & comforting flavour of mashed potato & cabbage pancakes
If you have left-over potatoes from your party, don’t throw them away. You can use them to use incredibly delicious pancakes using cabbage. The comforting taste of pancakes made with potatoes is too irresistible to pass, and would make a great after-school snack. Try this recipe at home using Aditi sunflower oil; you would most definitely love it.
Method
2 cups finely chopped steamed cabbage (about 1 pound cabbage)
2 ½ cups mashed potatoes (about 1 pound 2 ounces potatoes, peeled, cut in chunks and steamed until tender – about 20 minutes – then mashed with a potato masher or a fork)
½ cup chopped chives
1 tablespoon chopped fresh marjoram (optional)
1 teaspoon baking powder
Salt and freshly ground pepper to taste
¼ cup all-purpose flour
2 eggs
3 to 4 tablespoons #Aditi sunflower oil for frying
PREPARATION
To prepare the cabbage, remove the outer leaves and quarter a small head or 1/2 of a larger head. Core and place in a steamer above 1 inch of boiling water. Steam 10 to 15 minutes, until tender when pierced with a knife or skewer. Remove from the heat and allow to cool, then squeeze out water, and chop fine. Mix with the potatoes in a large bowl. Add the chives, baking powder, marjoram if using, salt, pepper, and flour. Beat the eggs and stir in.
Heat large heavy skillet over medium heat. Heat the oven to 300 degrees. Add 2 tablespoons of #Aditi sunflower oil & when it is hot carefully scoop up heaped tablespoons of the potato mixture and use a spoon or spatula to ease them out of the spoon into the pan. Gently flatten the mounds slightly with the back of a spoon or a spatula Brown on the first side – about 2 or 3 minutes – and using a spatula, flip the mounds over and gently push them down so that they will be shaped like pancakes. Brown on the other side and remove to a baking sheet. Continue with the remaining potato mixture, adding oil to the pan as necessary.

To poach eggs perfectly, make sure the eggs are really fresh, & adding a dash of vinegar will help it coagulate. Make sure you slowly tip the egg white into the water, & cook it for 3 minutes. Creating a whirlpool in the gently simmering water will make the egg wrap perfectly around the yolk.
