Skinny Lasagna - 240 kcal/20g protein
Servings: 12 - 240 kcal/20g protein each
9 uncooked lasagna noodles
1 lb extra-lean (at least 90%) ground beef
2 cloves garlic, finely chopped
1 jar (25.5 oz) Italian herb pasta sauce
1/8 teaspoon ground red pepper (cayenne)
1 1/2 teaspoons dried basil leaves
1 egg
1 container (15 oz) reduced-fat ricotta cheese
2 cups shredded reduced-fat mozzarella cheese (8 oz)
1/3 cup shredded Parmesan cheese
1. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain noodles as directed on package. Place in cold water.
2. Meanwhile, in 12-inch skillet, cook beef and garlic over medium-high heat 5 to 7 minutes, stirring frequently, until beef is thoroughly cooked; drain. Stir in pasta sauce, ground red pepper and 1 teaspoon of the basil. Heat to boiling, stirring occasionally. Remove from heat.
3. Heat oven to 350°F. In medium bowl, beat egg slightly. Stir in ricotta cheese and remaining 1/2 teaspoon basil until blended. Drain noodles. Spread about 1/2 cup sauce mixture over bottom of baking dish. Top with 3 noodles, 1 1/2 cups of the sauce mixture, half of the ricotta mixture and 3/4 cup of the mozzarella cheese. Repeat layers once. Top with remaining noodles, sauce and mozzarella cheese; sprinkle with Parmesan cheese. Spray 15-inch piece of foil with cooking spray. Cover lasagna with foil.
4. Bake 45 minutes. Uncover; bake 10 to 15 minutes longer or until bubbly. Let stand 10 minutes before serving.

35-Calorie Hot Chocolate
Servings: 1 - 35kcal
2 cups (480mL) unsweetened cashew milk
2 tbsp (10g) unsweetened cocoa powder
12 drops vanilla crème stevia, or to taste
3 drops peppermint extract (optional)
1. Add all of the ingredients to a small saucepan, and whisk together until the cocoa powder is mostly incorporated. Cook over medium-low heat, whisking frequently, for 3-5 minutes or until warmed through. Pour into mugs and enjoy.
Notes: Any milk or sweetener may be substituted for the cashew milk and vanilla crème stevia. The stevia brand used in the original recipe is Sweetleaf.

Makes 1 Serving; Cals Per Serving - 41
Ingredients
1 Cup of Rice Cakes (5-6 oz)
2 Tsp of Gochujang
2 Tsp of Any 0 Cal Sweetener*
1 Tsp Soy Sauce
¾ Cup Water
*If you don't like sweetener or don't have any you can use sugar which will make the meal 81 calories
Instructions
If your rice cake is fresh, cut them diagonally into cylinder-like shapes. If frozen, defrost your rice cakes.
Add water, gochujang and sweetener to a pan and bring to a boil on medium high heat.
Add rice cakes to the gochujang water and lower the heat to a simmer for about 8-10 minutes
(Optional) Serve your tteokbokki with sprinkled sesame seeds on top and enjoy.

Stuffed Mushrooms - 79 kcal/6g protein

6 servings. 79kcal/6g protein per serving.
6 large stuffing mushrooms
1 10 oz package frozen chopped spinach
1/2 a large onion, diced
1 glove garlic, diced
2 tsp parmesan cheese
1/2 cup cheddar cheese
1 tsp olive oil
1/4 paprika
1/4 coriander
dash pepper
dash salt
1. Preheat oven to 350. 2. Clean and hollow out six large mushroom caps (average 14 oz package.) Put in 8 x 8 pan
3. Heat 1 tsp olive oil to large skillet, medium heat 4. Add onions and garlic, saute until onions are soft 5. Add spinach. Mix well 6. Add parmesan cheese. Mix well. 7. Add cheddar cheese. Reduce to low heat and mix. 8. Add paprika, coriander, and salt and pepper to taste. 9. Remove heat, spoon mixture into mushroom caps. 10. Bake mushroom caps ~20 minutes or until desired mushroom texture. 11. Makes 6 large mushrooms
