iirc while the first real monster was a genie episode there were unexplained phenomenas all throughout the first decade of the series (like the sandwich that shaggy made that just floated by)

Definitely, there have been a lot of stuff that could be considered plot holes. But, the easiest explanation is that it was done for laughs and no other reason. That scene of Shaggy and the sandwich during the Hassle In The Castle episode is clearly one of those "just for laughs" scenes.

I don't think it is a point to ignore all the unexplained stuff that has happened on the show. As someone who has loved Scooby for basically his entire life, I take it as simply something to enjoy while not thinking too hard about the details.

Scooby is perfect in my eyes. And it always will be. Except for that disaster of a Velma show.
