I hope you give this one a go it is a very nice soup
Creamy Tomato Soup.
1 tbsp bacon fat olive oil
1 cup diced onion
1/2 cup diced celery
3 cloves garlic rough dice
1 shot of brandy or sherry
1 litre of good chicken broth
1 (28-oz) can San Marzano tomatoes, crushed by your hand always enjoyable to do.
1/2 tsp paprika
3 tbsp white long grain rice
salt and pepper to taste
pinch of cayenne pepper
heavy cream and basil leaves for garnish
rough directions it’s your soup.
Heat bacon fat in a large pot over medium heat add onion and celery with a sprinkle of salt and cook till onion is translucent. Stir in garlic and cook about 3 minutes do not let the garlic brown. Add a shot 1 oz of brandy to the pot and deglaze cook until the brandy is gone. Add chicken broth and tomatoes into onion mixture and bring to a boil season with paprika, black pepper, and cayenne pepper. add rice and turn heat down to a low simmer, cook for 1 hour on low heat. Blend soup in blender or immersion blender. I prefer the stand up blender, serve with a little heavy cream and a basil sprig.
Please adjust the seasoning as you go, the only thing worse that a bowl bland soup is a pot of bland soup.

Dale’s Saturday night broth.
Way back in the day we had a pot of what we called Broth every Saturday night. The Broth was a vegetable soup really but sometimes it had chicken in it. I make mine both ways depending if I have chicken in the fridge or not. No rules on this. Saturday was market day in Ballymena, and this meant lots of wheeling a dealing going on with the farmers and traders. My father would go up the town (as it was called) on Saturday morning and get some fresh produce from the market, and fresh meat from the small butcher shop. The Broth was made by mid afternoon and ready for all the folks who would drop by on Saturday night on their way home from being up the town (in the pub) and I recall there was always lots people dropping in. As a kid this was a great night to be home, because uncles, aunts and cousins always had spare change for you on Saturday nights. Here is my take on the broth, but as always please feel free to add or change as you see fit. I sometimes add summer savoury to give it a different kick. I'm sure there are moreSaturday night broth stories out there. Would love to hear them.
Dale’s Saturday night broth. 2 med leeks 2 large potatoes 2 med carrots 1 parsnip 1/2 cup turnip 2 stalks celery 1 med onion 3 green onions 1/3 cup barley (rinsed and picked over) 1/3 cup red lentils (rinsed and picked over) 1/2 cup finely chopped fresh parsley 3 litres of well seasoned chicken or vegetable broth 1 litre of water. Salt & pepper to season Method Dice and rinse all the vegetables, place in a large pot, add the seasoned chicken or vegetable broth and water bring to a boil boil, this is a good time to season with salt and pepper. Boil until the vegetables are softened, lower the heat and let the broth simmer until the barley and lentils are soft. If you need to add more liquid add more water Keep on a low simmer until you are ready to serve, 10 minutes before serving check the seasoning and add the fresh parsley. This is a very forgiving soup and please feel free to add or change as you see fit. Enjoy with a well buttered piece of wheaten or soda.
