Need A Great Recipe for That Gobbler? Try Cashew Turkey! With the 2018

With the 2018 Spring Turkey Season well under way here in North Florida here’s a great recipe for those of you fortunate enough to have harvested a gobbler already.
Like any game, wild turkey is very lean and nutritious.
The biggest problem you face with cooking any wild game meat is overcooking – it’s just easy to end up with meat that’s dry and tough.
Many people have had a bad experience with wild meat because it was poorly cared for and prepared.
Smoking is great, baking is great, but frying is my preference!
Our native Missouri is the home of “Cashew Chicken” (invented in Springfield, MO) and we have yet to find a real cashew chicken place here in North Florida.
My great wife of 37 years has substituted wild turkey for the chicken and for the past twenty years or so we have had many a “Cashew Turkey” meal.
It’s a family favorite and every year we all look forward to a spring time family gathering centered around a large platter fried turkey slathered in cashew sauce ( like we plan to here in a few days:)
Here is our favorite turkey recipe along with a few helpful tips:
CASHEW TURKEY 
1 lb. of turkey breast per person
1 egg per pound of turkey
ÂĽ cup milk per egg
Lots of flour, pepper, and salt (easy on the salt if you don’t like salty foods)
Peanut or vegetable oil
Step #1-PREPARE THE MEAT 
Remove turkey breast, clean out any feathers and shot you can see
Rinse well, place in a large bowl and soak overnight in water in the fridge
The meat can stay in this condition several days, just make sure you cover the bowl with a lid or clear plastic
When you slice the meat for frying make sure you cut it across the grain (perpendicular to the length of the breast)
Drain and dry the meat before slicing.
Cut the breast into strips first then cut in to cube about ½ -¾ “ square
Examine each cube for shot, feathers, or any dark spots
Cut them out and discard them – nothing worse than biting down on a piece of shot!
Let the cubes set 15 min. or so before moving on
Mix egg, milk, salt, and pepper in a bowl
Dip the meat in the egg mixture then roll in flour, let stand 15 minutes
Dip the meat in the egg mixture again and roll in flour once more – now you are ready to fry!!!
Heat your oil in a large, deep skillet (I use a giant cast iron skillet) or Fry Daddy.
You want it as hot as possible but not smoking or burning
The goal is to cook the meat thoroughly but as quickly as possible without burning or overcooking
When your meat turns a light, golden brown remove it and keep it warm – nothing worse than cold food!
Step #2- PREPARE CASHEW SAUCE (makes at least 4 batches)
3 chicken bouillon cubes
2 cups water
3 tsp. corn starch
2 tsp. sugar
1 tsp. salt (omit salt if you don’t care for salty foods)
1 tsp. soy or oyster sauce
½ cup cashews (unsalted or rinse off the salt)
½ cup green onions
Boil water and dissolve the bouillon cubes
Pre-mix your starch with cold water then pour slowly into the bullion mixture to thicken
Stir and cook for a few minutes over low heat until desired thickens is achieved – not to thick, not to thin
Turn off heat and let sit for 5 or 10 min.
Step #3- SERVE
Arrange 4-6 pieces of turkey on a plate and cover with cashews
Sprinkle with cashew sauce and green onions
I like mine served on a bed of stir fried rice (parboiled rice fried in a lightly oiled skillet with some soy sauce and a scrambled egg or two thrown in) or you can serve fried rice on the side
This is my favorite way to enjoy wild turkey and I have no doubt you will enjoy it as well.
If the season happens to leave you empty handed domestic chicken or turkey will work as well.

The Magic Hour of Turkey Hunting

The past two Saturdays I have been out turkey hunting with my oldest son. Ironically, both Saturdays we have had nice gobblers within range of our blind at nearly the same hour. The first Saturday we had two longbeards come in completely silent right at 11a.m. and this past Saturday we had a lone gobbler come in at 11:08a.m., he was within range but my son just could not quite get on him and he slipped away from view.
The moral of the story, don’t give up on the hunt just because a gobbler does not come in right away. Both mornings we heard gobblers around us, it just took them a while to work into our calls.
Dad wrote an article a year or so ago on the seven phases of a turkey hunt. This is a great way to understand how a day unfolds in the world of a gobbler. We have had success waiting until those later morning hours when the hens have gone away and the toms get lonely. Here is an overview of these seven phases.
1.Sunrise and Fly-Down.
Be in the woods and near the birds well before sunrise.
Generally, toms will sound off at daylight but I have heard them gobble in the dark. After a bit of gobbling most toms will fly down- listen close and you may hear them land.
Remember, a gobbler wants the hens to come to him – calling a tom to you is working against nature but it can be done.
Some toms may stay on the roost quite some time – especially when pressured.
2.Morning Round Up
A tom will quickly attempt to round up his harem and this is your first chance of the day.
Once a tom has corralled his lady friends he will spend the next few hours strutting his stuff and it will be difficult to separate him from his flock – can you blame him?
Do your best to get within 100 yards of the roost and attempt to call the tom in.
3. The Lull
If you don’t harvest your bird at the fly down or shortly thereafter you may experience the lull – time for a nap! Just lay back and take it easy for a bit.
Generally, if you get up and run around all you will do is educate your birds.
4.Back in Business
Normally by nine o’clock tom and his ladies split up. This is your second chance of the day.
I think toms are a bit more vulnerable now. With no date he is a bit more anxious to make a new friend.
5.In the Zone
This is one of turkey hunting’s best kept secrets. Many dominant gobblers have a strutting area they visit around mid -morning.
If you can locate a strut zone your chance for success will skyrocket.
Here in FL. it seems toms don’t gobble much after daylight so knowledge of a strut zone is a great asset.
6.Lunch Break
Whatever you do, don’t go home early. In fact, if getting up at 3 a.m. doesn’t appeal to you sleep in and start hunting mid-morning.
I have killed as many gobblers from 9a.m-1p.m. as I have from sunrise to 9a.m. 
7.Last Ditch Effort
Big games are often won at the buzzer and many a long beard has met his maker minutes before the clock strikes 1p.m.
Yesterday, three hens and a big gobbler came strolling through my back yard at 12:21 PM.
Turkeys never leave the woods.

Tips For Late Season Gobblers

While many folks have been enjoying the NCAA tournament, Florida turkey hunters are facing a showdown and madness of their own, here are some tips to help you get your last minute gobbler.
With just a few weeks left, you still have time to get a last minute gobbler.  If you’re like we are, the warming weather is bringing on added responsibilities and chances to hunt are getting slimmer. To make matters worse, it’s possible that new hunters have invaded our “Secret” location.
Anytime you hunt public land and consistently park in a certain area people notice, especially locals. An abundance of new tire tracks means one thing, it’s time to move on.
“When the going gets tough the tough get going” couldn’t be a more true adage at this point in the season. It’s time to regroup and start praying for last minute gobbler miracle! Here are a few points to remember.
1.    Turkeys Relocate Under Pressure
It’s not that complicated. Big gobblers and big bucks simply move to more tranquil settings when pressure heats up.
From our years of hunting in Missouri, where you can actually see what’s happening, I’m positive that big toms will easily move a mile or more.  It’s no different than hunting pressured deer. Sometimes our biggest mistake is staying in the same old rut.

Unless you have a good reason to stay put It’s time to move on to greener pastures.
2.               The Rules Never Change
A major key to successful hunting is constant scouting.
As the game moves in response to pressure you need to do the same.
I plan on spending some of the time I have left covering some ground with gun in hand.
We developed a super good area this spring, however it’s small and very sensitive to pressure.
It’s senseless to stay put. It’s better to have 20 prime locations that you hunt once or twice, then to have one good location you hunt 20 times.
A good location hunted often will quickly go bad.
Put on your walking boots and find a new area!
3.              It Can All Turn Around In 60 Seconds
Three or four weeks of turkey hunting can leave you bruised, battered, and exhausted. I can’t tell you the times that when I was just about to concede to defeat and the tables were turned.
I recall a hunt with my youngest son many years ago. The season had been a tough one. Unlike Florida, the Missouri season ends at 1:00 P.M., even on private land.
After a barren morning, we hiked to the top a high pasture and settled up against a small rocky outcrop for a high noon showdown.
I cranked on the call as loud and hard as I could.
Off in the distance, several pastures west, a small black dot appeared at the end of the field. It was a young Jake and he was on a death run.
In a matter of a few moments he covered around 500 yards and marched right in for the kill. We were elated and rejoicing in the fruits of persistence!
As you plan your remaining hunts, evaluate your area.
If gobbles or sightings are down, start looking for new turf.
Turkeys don’t just vanish, they are somewhere.
