It fundamentally changes how the artwork actually looks and makes it's own decisions on how to "improve" it.

Make videos harder to monetize,
make videos easier to get demonetized for saying certain "adult" words (like suicide, rape, or pedophilia, making legitimate videos discussing these topics into a clown show because they have to censor the words or god forbid say "grape" and "unalive"),
make it easy for false companies to instigate copyright takedowns of things they don't own,
censoring (just refusing to post/show) comments that mention certain topics like 'feminism' or other 'hot topics' even if it's a serious and legitimate discussion,
don't allow people to block channels or users,
demonetizing and unlisting videos posting LGBTQIA+ topics [https://www.rollingstone.com/culture/culture-features/lgbtq-youtube-lawsuit-censorship-877919/],
forcefully change how media is categorized (Someone's video was changed to 'for kids' simply when it has 'mickey mouse' in it and youtube would not let them change it back),

I can't imagine that all of these changes they keep making that NO one can opt out of that use even more resources are somehow more efficient or improve quality of life. I have zero faith that YouTube is doing this as an 'oopsie my bad' when their track record has been garbage for about 10 years.

as for resources:
the usda guide to canning (revised in 2015). you used to be able to find it on the usda website but for SOME reason (two guesses as to why 🙄) that website is now routing to a broken error 404 page not found. fortunately, it's available other places! here it is hosted on the internet archive! if you want it printed in color and spiral-bound, you can also purchase it for $25 from perdue university.
if you want more resources, the university of utah has a whole section of their preserve the harvest extension website dedicated to safe food storage practices including freeze drying, fermenting, drying, etc.
ball (the mason jar company) also has a section of their website dedicated to canning 101, including the basic process, recipes, a glossary of terms, and videos for their tutorials if you're a visual learner. they also offer free online recipes broken down in a way that's meant to be easy even for new canners.

I am begging the FDA to require that companies CANNOT just put "spices" as an ingredient but have to label the spices.
"Spices" can mean "this has some oregano and black pepper in it" or it can mean "this has cumin cayenne and paprika and if you eat this you will be sick in bed in pain for a week" for me.
Seriously, this is an allergy issue and a huge oversight on the part of corporations.
Require detailed labeling of spices used in packaged foods NOW.

at some point you have to realize that you actually have to read to understand the nuance of anything. we as a society are obsessed with summarization, likely as a result of the speed demanded by capital. from headlines to social media (twitter being especially egregious with the character limit), people take in fragments of knowledge and run with them, twisting their meaning into a kaleidoscope that dilutes the message into nothing. yes, brevity is good, but sometimes the message, even when communicated with utmost brevity, requires a 300 page book. sorry.

my advice to you is to never waste your time trying to fit into a club or hobby or any community who makes you beg for acceptance and approval just to participate when you could do the alternative—get involved in a niche and endangered hobby run primarily by old people.
i wanted to learn how to hunt ruffed grouse and train bird dogs so i sent an email to my local chapter of the ruffed grouse society explaining that getting into wildlife groups is intimidating to me because I’m trans
and all they saw was that someone under 60 wanted to learn to hunt grouse & several months into my mentorship I was told that like 7 old guys argued over me until they had to pick a number between 1 and 100 to decide who got to personally mentor me.
imagine vying for the acceptance of some gatekeeping weirdos when your mere interest could be inciting verbal combat among retirees
