Tex Mex Chicken Chili

Tex Mex Chicken Chili

A low-fat version of your favorite chili, with an added tex mex flavour.

Ingredients

3inch bonelessskinless chicken breasts, cut into 1/2cubes

2Tbsp flour

1small yellow onionchopped

1small can corndrained

2whole garlic clovesminced

119 oz no-salt-added black beans

1 jar of your favorite pasta sauce

3/4cup no salt added chicken broth

1Tbsp chili powder

1 1/2tsp dried basil

1tsp dried oregano

1 1/2tsp jalapeno pepperseeded and finely diced

Cilantrochopped

cheddar cheesegrated

Instructions

Toss the chicken and flour together in a small bowl. Spray a large saucepan with cooking spray and heat over medium heat. Saute the chicken approximately 5 minutes or until it is lightly browned on all sides, but do not cook through. Set aside.

Respray the same saucepan with cooking spray and cook the onion until soft. Stir in the corn and garlic and cook until the corn is browned.

Add the beans, pasta sauce, chicken broth, chili powder, basil, oregano, and jalapeno. Bring to a boil, reduce heat and cover. Simmer for 15 minutes.

Add the chicken and simmer another 10 minutes, until the chicken is fully cooked.

Garnish with cilantro and cheese.

Solving the 2cube

What follows isn't just a solution to the 2×2×2 Rubik cube. It also tries to explain how to solve the puzzle (and thus give pointers to related ones) by introducing some basic mathematics: groups, actions, commutators. This all works perfectly well for solving the corners of a 3×3×3 cube too.

We write R, U, F, L, D, B for clockwise quarterturns of the right, up, front, left, down and back faces respectively, with lower case letters for the anticlockwise quarterturns. Sequences of turns are written/read left to right.

The eight cubelets are numbered: 0 right up front; 1 right up back; 2 left up front; 3 left up back; 4 right down front; 5 right down back; 6 left down front; 7 left down back. Remember 1, 2 and 4: the rest are sums.

Cube states

We can chain together quarterturns to generate a vast collection of possible cube states. Any chain of turns is reversible, so we have what mathematicians call a group of turn sequences (or words) acting on the cubelets by permuting them and twisting them.

The order of the turns matters. This is effect of RU:

So RU and UR are not equal. They are different. How different?

Commutators

One way of qualitatively measuring the difference between RU and UR is to do RU then undo UR. This word, RUru, is called the commutator of R and U, written [R U].

Note that for any words u, v then [v u] reverses [u v] and both are the identity iff u and v commute. Intuitively the more complex [u v] is the more the actions of u and v interfere with each other.

A cubelet is only moved by [u v] if it falls in the path of both actions. Any cubelet affected only by u or by v is just moved and moved back again. Commutators are thus have a limited effect on the puzzle. This makes them ideal probes for exploring the whole group.

We can see this above with [R U]. It leaves half the puzzle intact – cubelets 2, 5, 6, 7 – while swapping (04) and (13) and giving each a twist in the process. Our solution will be based on simple variations of this move alone.

Symmetry and the edge swap

The 2cube is obviously symmetrical in the 0374 plane, so the mirror of [R U] should have mirror effect: [f u] swaps (04) and (23) while twisting them. In fact chaining these two commutators twists 0 and 4 one way and then back again (again, no surprise by symmetry), thus the net result is to send 1 to 2 via 3, 2 to 3, 3 to 1, ie the cycle (123).

Chaining on a u quarter turn gives us [R U][f u]u = RUrufuF = (01). It swaps round cubelets 0 and 1, while twisting 0, 1 and 3. The remainder of the cube stays intact. We call this word the (01) edge swap.

Final twists

You should be able to solve one layer of the puzzle (say the down face) from just messing about, then use edge swaps to permute the final four cubelets into place. All that remains now is to orient them correctly.

Here are techniques to deal with two common situations, which I've called triple twist and cat's eyes. Both are based on the commutators above. Together they suffice to solve the cube. There are plenty of other similar routines: play around and discover them for yourself.

The triple twist situation occurs when the 0, 1 and 3 cubelets all need a clockwise twist. To do this we just edgeswap (01) twice.

The cat'e eyes situation occurs when 1 needs an anticlockwise twist and 2 needs a clockwise twist. We apply the [R U] commutator twice then the [f u] commutator twice. By symmetry this leaves 0, 3 and 4 alone.

Combining these words (or their mirror images) together with simple quarterturns of the upper face suffices to deal with all situations.

Picking up on the example above, we complete the final face by putting an anticlockwise twist on cubelets 0, 2 and 3. We do this with a mirrored triple twist, ie a (02) swap followed by a (02) swap. A final D completes.
