With a hint of cardamom spice and a zesty citrus flavor, these Paleo Cardamom Streusel Orange Muffins are a delightful treat. They are a great Paleo-friendly snack or breakfast choice because they are grain-free and sweetened with coconut sugar.
Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1/2 cup coconut sugar. 1 tsp baking soda. 1/2 tsp salt. 1 tsp ground cardamom. 3 large eggs. 1/4 cup coconut oil, melted. 1/4 cup freshly squeezed orange juice. 1 tbsp orange zest. 1 tsp vanilla extract. 1/2 cup unsweetened almond milk. For Streusel Topping:. 2 tbsp almond flour. 2 tbsp coconut sugar. 1/2 tsp ground cardamom. 2 tbsp coconut oil, melted.
Instructions: Turn the oven on to 350 degrees Fahrenheit 175 degrees Celsius and line a muffin tin with paper liners. Almond flour, coconut flour, coconut sugar, baking soda, salt, and cardamom should all be combined in a big bowl. Eggs, melted coconut oil, orange juice, orange zest, and vanilla extract should all be thoroughly mixed in a separate bowl. Once you have a smooth batter, pour the wet ingredients into the dry ingredients and stir. After adding the almond milk, stir the batter until fully combined. To make the streusel topping, combine almond flour, melted coconut oil, cardamom, and coconut sugar in a small bowl and stir until coarse crumbs form. Spoon the muffin batter into each muffin cup, filling it about two thirds full. Evenly top each muffin with a streusel topping. When a toothpick is inserted into the center of a muffin, it should come out clean after 18 to 20 minutes of baking in a preheated oven. After five minutes of cooling in the muffin tin, move the muffins to a wire rack to finish cooling. Savour your Paleo Orange Muffins with Cardamom Streusel and a steaming cup of tea or coffee!
