Summit dinner menu rich in symbolism

SEOUL, April 26 (Yonhap) — Cold noodles from a famous Pyongyang restaurant and other symbolic dishes will be served at the dinner after the leaders of South and North Korea hold their first summit on the southern side of the border on Friday.
The menu also includes dishes made with rice and seafood from the hometowns of South Korean leader Moon Jae-in and his two liberal predecessors, Kim Dae-jung and Roh Moo-hyun, who visited Pyongyang for the two previous summits.
“This menu was thoughtfully chosen to honor those who have endeavored to achieve peace and unification on the Korean Peninsula over the past years,” Cheong Wa Dae spokesman Kim Eui-kyeom said at a press briefing on Tuesday.
Cold noodles, or “naengmyeon” in Korean, are one of the North’s signature dishes.

“Moon proposed that cold noodles from Pyongyang’s famous Okryukwan restaurant would be great for dinner, which the North accepted,” the spokesman said.
North Korea has already brought a noodle-making machine from the restaurant to Panmunjom at Seoul’s request.
The North will send a leading chef from the restaurant to Tongilgak, located on the northern side of the Panmunjom border village on Friday, so the chef can quickly deliver freshly made cold noodles to the leaders’ dinner table at Peace House on the southern side.
Two dishes on the menu — baked John Dory fish and a Korean version of the Swiss potato fritters known as rosti — are meant to be a reminder of the childhoods of Moon, who grew up in the southern coastal city of Busan, and Kim, who attended a boarding school in Switzerland.
The two leaders will also have grilled beef from a ranch where the late Hyundai Group honorary chairman Chung Ju-yung raised a herd of cattle that he gifted to North Korea in 1998.
A traditional Korean cold salad cooked with octopus from the hometown of renowned Korean-born composer Yun I-sang was also on the menu. Yun traveled to the North numerous times to develop the country’s classical music scene and led a group of South Korean musicians to Pyongyang for a joint performance with North Korean artists in 1990.
Prepared for toasts were two different types of traditional Korean alcoholic beverages: “myeoncheon dugyeonju,” a liquor brewed from azalea flowers and glutinous rice, and “munbaesool,” a distilled liquor that originated in the North.
