These Vegan Keto Cinnamon Roll Bites are a tasty treat for people who are vegan or on the keto diet. They don't have any sugar or carbs and are full of cinnamon flavor.
Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1/4 cup erythritol or preferred keto-friendly sweetener. 1 tsp baking powder. 1/4 tsp salt. 1/3 cup melted coconut oil. 1/4 cup unsweetened almond milk. 1 tbsp ground flaxseed + 3 tbsp water for flax egg. 1 tsp vanilla extract. 2 tbsp cinnamon. 1/4 cup powdered erythritol for dusting.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Put water and ground flaxseed in a small bowl. Let it sit for a few minutes to make a flax egg. Mix erythritol, baking powder, salt, almond flour, and coconut flour in a large bowl. Melt the coconut oil and mix it with the almond milk, vanilla extract, and the flax egg. Mix until you get a dough. Spread the dough out on a clean surface and roll it into a rectangle that is about 1/4 inch thick. Spread the cinnamon out over the dough. Roll the dough into a log shape, starting at one end. Once the baking sheet is ready, cut the log into bite-sized pieces and place them on it. For 12 to 15 minutes, or until just barely golden. After the cinnamon roll bites have cooled for a few minutes, sprinkle them with erythritol powder.

Sweet Potato Cinnamon Roll Delight These scrumptious sweet potato cinnamon rolls are infused with warm spices and topped with a decadent brown butter cream cheese glaze, making them a perfect treat for any occasion. Ingredients For the Dough ?1/4 oz active dry yeast (2 1/4 tsp total) ?1 tsp granulated sugar ?1/4 cup warm water (about 115F) ?4 cups all-purpose flour (plus more for rolling) ?1/2 cup granulated sugar ?3/4 tsp kosher salt ?3/4 cup sweet potato puree ?1/4 cup whole milk (room temperature) ?6 tbsp unsalted butter (melted) ?1 large egg (plus 1 egg yolk, room temperature) For the Filling ?3/4 cup dark brown sugar ?1 1/2 tbsp ground cinnamon ?1/4 tsp kosher salt ?1/4 cup unsalted butter (room temperature) For the Brown Butter Cream Cheese Glaze ?8 tbsp unsalted butter ?8 tbsp cream cheese (very soft) ?2 cups powdered sugar ?1 tsp vanilla extract ?1/8 tsp sea salt ?3 tbsp milk (up to 4) ?1/2 cup pecans (toasted and chopped) Instructions For the Dough In a small bowl, combine active dry yeast and sugar. Stir in warm water and let it sit for 10 minutes until a 2-inch head of foam appears on top, indicating that the yeast is active. In the bowl of your stand mixer fitted with the dough hook attachment, add 2 cups of flour, sugar, and salt. Mix on low for 30 seconds until well combined. Add sweet potato puree, milk, melted butter, the yeast mixture, and eggs. Mix on low until the ingredients start to come together, about 1 minute. Incorporate the remaining 2 cups of flour and mix on medium until all the flour is absorbed and a dough starts to form, about 2 minutes. Increase the speed to medium-high and mix for 7-8 minutes until you have a taut ball of dough and the bowl is clean. Remove the dough from the mixer, shape it into a ball, and place it in a glass or metal bowl sprayed with nonstick spray. Cover it with a clean kitchen towel or plastic wrap and let it rise in a warm spot for 1 hour until it doubles in size. For the Assembly While the dough is proofing, mix dark brown sugar, cinnamon, and salt in a small bowl. Prepare a 9x9x3 pan by spraying the bottom and sides with nonstick baking spray. Once the dough has risen, chill it in the refrigerator for 30 minutes. On a lightly floured surface, roll the dough into a 14×17 inch rectangle with the long side facing you. Spread softened butter across the surface of the dough, leaving a 1-inch space at the bottom. Sprinkle the brown sugar mixture evenly over the butter and press lightly to adhere. Starting from the top, roll the dough tightly into a log, pinching the bottom edge to seal. Position the log with the seam side down and trim ½ inch from each end. Cut the log into 9 even pieces and place each piece cut side up in the prepared pan. Cover the pan with a clean kitchen towel or plastic wrap and let it rise in a warm spot for 40 minutes until plump. Preheat your oven to 375 F. For Baking and Glazing Bake the rolls for 25-30 minutes until golden brown and fragrant. In a small saucepan, heat the butter over medium-low until it turns chestnut brown and has a nutty aroma, about 6-8 minutes. Allow it to cool slightly. In a medium mixing bowl, whisk the cream cheese and browned butter together until well combined. Gradually whisk in powdered sugar, vanilla, and salt until smooth. Add milk until you reach a creamy consistency. Pour the glaze over the warm rolls, spreading it out evenly. Sprinkle toasted pecans on top before serving.

Dairy Free Cinnamon Rolls That Still Taste Like Home
I grew up with buttery, cream-filled cinnamon rolls every Sunday. When I had to give up dairy, I thought those sweet, sticky mornings were over.
Turns out, they weren’t.
These dairy free cinnamon rolls are soft, fluffy, and full of cinnamon-sugar love, without a drop of milk or butter. The dough uses almond milk and coconut oil, the filling melts just right, and the glaze? Dreamy.
Whether you’re vegan, lactose-intolerant, or just curious, this recipe brings the comfort without compromise. It’s my go-to weekend bake.
📖 Full recipe.
