This salad with watermelon, feta cheese, and balsamic reduction is cool and tasty. The sweet watermelon and salty feta cheese go well together. With its sour and slightly sweet glaze, the balsamic reduction makes the salad a great summer side dish or a light and healthy starter.
Ingredients: 4 cups of cubed watermelon. 1 cup of crumbled feta cheese. 1/4 cup of fresh mint leaves, chopped. 1/4 cup of balsamic vinegar. 2 tablespoons of honey. 1 tablespoon of olive oil. Salt and pepper to taste.
Instructions: In a small saucepan, combine the balsamic vinegar and honey. Bring the mixture to a simmer over medium heat and let it cook for 5-7 minutes or until it has reduced by half. Remove from heat and let it cool. In a large salad bowl, combine the cubed watermelon, crumbled feta cheese, and chopped mint leaves. Drizzle the cooled balsamic reduction and olive oil over the salad. Gently toss the salad to coat all the ingredients with the dressing. Season with salt and pepper to taste. Serve immediately and enjoy!

Like PF Chang's famous dish, these vegan mushroom lettuce wraps are a great way to start the day or eat something light. The savory mushroom filling is full of different tastes and textures, and the crisp lettuce leaves go well with it.
Ingredients: 1 tbsp olive oil. 1 onion, finely chopped. 3 cloves garlic, minced. 1 red bell pepper, diced. 1 cup mushrooms, finely chopped. 1 cup water chestnuts, chopped. 1/4 cup hoisin sauce. 2 tbsp soy sauce. 1 tbsp rice vinegar. 1 tsp sesame oil. 1 head iceberg lettuce, leaves separated. 2 green onions, sliced for garnish. 1/4 cup chopped peanuts optional, for garnish.
Instructions: Warm up a big pan with olive oil over medium-low heat. Put in the garlic and onion, and cook until the onion is clear. You can add mushrooms, water chestnuts, and bell pepper. Keep cooking until the mushrooms are soft. Soy sauce, rice vinegar, sesame oil, and hoisin sauce should all be mixed in. For another two to three minutes, cook. Take it off the heat and let it cool down a bit. Put the mushroom mix into lettuce leaves. Add chopped peanuts and sliced green onions as a garnish if you like. Serve right away and enjoy!

Enjoy a light and flavorful vegan twist on classic pesto pasta by using zucchini noodles instead. This dish is fresh, vibrant, and perfect for a quick and healthy meal.
Ingredients: 4 medium zucchinis, spiralized into noodles. 2 cups fresh basil leaves. 1/4 cup pine nuts. 2 cloves garlic, minced. 2 tablespoons nutritional yeast. Juice of 1 lemon. 1/4 cup extra virgin olive oil. Salt and pepper to taste.
Instructions: In a food processor, combine basil, pine nuts, garlic, nutritional yeast, lemon juice, salt, and pepper. With the processor running, slowly drizzle in olive oil until the mixture forms a smooth paste. Toss the spiralized zucchini noodles with the pesto sauce until well coated. Serve immediately, or chill in the refrigerator until ready to serve.

A delicious and light pasta dish that combines traditional spaghetti with healthy zucchini noodles. The garlic butter sauce adds a rich flavor while the Parmesan cheese and fresh parsley enhance the taste. Perfect for a quick and satisfying meal.
Ingredients: 2 medium zucchinis, spiralized into noodles. 200g spaghetti. 4 cloves garlic, minced. 4 tbsp butter. 2 tbsp olive oil. Salt and pepper to taste. Grated Parmesan cheese for garnish. Chopped fresh parsley for garnish.
Instructions: Follow the directions on the package to cook the spaghetti. Remove the water and set it aside. Melt the butter in a big pan over medium-low heat. Place garlic and olive oil in a bowl. For about one minute, cook until the garlic smells good. Put zucchini noodles in the pan and cook them for two to three minutes, until they are soft. Put cooked spaghetti and zucchini noodles in the pan. Add everything to the bowl and mix it well. Add pepper and salt to taste. Add grated Parmesan cheese and chopped fresh parsley on top while the food is still hot.

Grilled shrimp with chipotle lime sauce goes well with a fresh salad and a spicy cilantro lime dressing. If you want a light and tasty BBQ meal, this dish is perfect.
Ingredients: 1 lb large shrimp, peeled and deveined. 2 tablespoons olive oil. 2 teaspoons chipotle powder. 2 limes, juiced. Salt and pepper to taste. 8 cups mixed salad greens. 1 cup cherry tomatoes, halved. 1 avocado, sliced. 1/2 red onion, thinly sliced. 1/4 cup chopped fresh cilantro. 1/4 cup crumbled feta cheese optional.
Instructions: Put lime juice, salt, pepper, olive oil, and chipotle powder in a bowl. Combine well. Add the shrimp to the sauce and mix them around. For at least 30 minutes, let it sit. Warm up the grill over medium-high heat. Skewer shrimp that has been marinated. Grill the shrimp for two to three minutes on each side, or until they turn opaque and grill marks show. Put mixed greens, cherry tomatoes, avocado, red onion, and cilantro in a large salad bowl. Put grilled shrimp on top of the salad, and if you want, you can sprinkle it with feta cheese. Put the cilantro lime dressing on top of the salad. Gently toss to mix, and serve right away.

Ingredients: 2 cups mixed greens. 1 cup cherry tomatoes, halved. 1/2 cucumber, sliced. 1/4 red onion, thinly sliced. 1/4 cup crumbled feta cheese. 2 tablespoons balsamic vinegar. 2 tablespoons extra-virgin olive oil. Salt and pepper to taste.
Instructions: In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese. In a small bowl, whisk together the balsamic vinegar and olive oil to make the dressing. Drizzle the dressing over the salad and toss gently to combine. Season with salt and pepper to taste. Serve immediately and enjoy!
