These Blackberry Raspberry Meringue Kisses are a delicate and sweet treat with a burst of berry flavor. The crispy exterior gives way to a soft interior, creating the perfect texture balance.
Ingredients: 3 large egg whites. 1/2 teaspoon cream of tartar. 3/4 cup granulated sugar. 1 teaspoon vanilla extract. 1/2 cup blackberries. 1/2 cup raspberries. 1 teaspoon lemon juice. 1/4 cup powdered sugar.
Instructions: Preheat your oven to 200F 93C and line a baking sheet with parchment paper. In a clean, dry mixing bowl, beat the egg whites and cream of tartar on medium speed until soft peaks form. Gradually add the granulated sugar while continuing to beat, until glossy stiff peaks form. Gently fold in the vanilla extract. Place small spoonfuls of the meringue mixture onto the prepared baking sheet, forming meringue kisses. In a food processor, blend the blackberries and raspberries until smooth. Pass the puree through a fine sieve to remove seeds. Mix in the lemon juice and powdered sugar into the berry puree. Using a toothpick or skewer, create swirls of the berry mixture on top of each meringue kiss. Bake in the preheated oven for about 1.5 to 2 hours, or until the meringues are crisp and dry. Once done, turn off the oven and leave the meringues inside to cool completely. Carefully remove the meringue kisses from the parchment paper and store in an airtight container.

Instructions: Preheat the oven to 225F 110C and line a baking sheet with parchment paper. In a clean, dry bowl, beat the egg whites and salt until soft peaks form. Gradually add granulated sugar while continuing to beat until glossy stiff peaks form. Gently fold in the vanilla extract. Spoon or pipe meringue onto the prepared baking sheet, forming cookie shapes. Create slight indentations in the center of each cookie for holding the berries. Bake in the preheated oven for 1.5 to 2 hours, or until the meringue cookies are crisp and dry to the touch. Turn off the oven and leave the cookies inside to cool completely. Once the cookies are cooled, carefully place mixed dark berries in the indentations. Dust the cookies with powdered sugar for an elegant finish. Serve the dark and moody meringue berry cookies immediately, and enjoy!

A delightful twist on the classic Eton Mess, this parfait combines macerated strawberries, whipped cream, and crushed meringue cookies for a heavenly dessert experience.
Ingredients: 2 cups strawberries, hulled and sliced. 2 tablespoons sugar. 2 cups heavy cream. 1/4 cup confectioners' sugar. 1 teaspoon vanilla extract. 1 cup meringue cookies, crushed. Mint leaves for garnish.
Instructions: Put sugar and sliced strawberries in a bowl and mix them together. It needs 15 minutes to break down. Whip the heavy cream in a different bowl until soft peaks form. When you add the vanilla extract and confectioners' sugar, keep whipping until stiff peaks form. Mix the strawberries that have been mashed into the whipped cream slowly. Put crushed meringue cookies in serving bowls or glasses and top with the strawberry and cream mixture. Put more layers on top, ending with a dollop of the strawberry and cream mix. Add mint leaves as a garnish. Put it in the fridge for at least an hour before you serve it. Have fun with your delicious Eton Mess Parfait!
