What Was That?

In honor of 13 Days 13 Shorts 10th Anniversary!... I have decided to give myself an extra challenge and make every day’s recipe ALSO anniversary themed... Let’s see how this goes!

As someone in their mid-30s, I can fondly look back at my childhood, and remember some amazing foods that no longer exist. Nostalgia is one of my favorite feelings... hell... I built my profession around it, but every once in a while, I remember a look... or taste... but can’t quite remember the name that goes with it.

What flavor was Big Red Soda??? Was Bubble Tape REALLY 6 feet of goodness??? What was that drink that was supposed to be the texturally enhanced alternative beverage of the future??? That last one got me thinking. It’s been 20 years since the drinkable Lava Lamp broke onto the scene in early 1997, and quickly burned itself out later that same year. In fact, it was late October of 1997 that the company that made Orbitz officially pulled the drink due to poor sales. They tried to market themselves as the first soft drink of the future, proudly showing off their website, Orbitz.com. Well 1997 was apparently too early for that kind of thing, and with the fruity beverages fall from pop culture, that website soon became an Internet Travel Company with the same name.

WELL SCREW THAT!!

It’s now 2017, and for the 20th anniversary of the birth & demise of Orbitz, I give to you an alcoholic version that I guarantee, if served to your friends this Halloween, will get at least a few, “Man... this looks just like that weird drink back in the 90s... What was that called?”

The Cosmic Scarecrow

Ingredients:

2g Sodium Alginate 3g Calcium Chloride 1 1/2c Water 1/2c Cinnamon Liquor 1/2t Xanthan Gum 1/2c Simple Syrup 1 bottle Angry Orchard Strawman Cider 2oz Absolut Orient Apple Vodka 2c Ice

Directions:

Blend sodium alginate and 125g (about 1⁄2 cup) of water with an immersion blender. Set aside for a couple of hours to let bubbles disperse.

Make a calcium chloride bath, with 1.5g calcium chloride to 1 cup water. After most of the bubbles have dispersed, add a small quantity (perhaps 1/8th) of the sodium alginate / water mixture to the Cinnamon Liquor. Mix with a spoon or small whisk. Load some of the amaretto mixture into a dropper or squeeze bottle and test. If the drop disperses on the surface of the bath, clean it off the surface, add more of the alginate mixture to the liquor and try again.

Once the spheres start to hold together, you're all set. The longer the sphere sits in the bath, the more the alginate and calcium will react so you'll get thicker walls. Remove spheres from the bath within a few seconds to prevent the whole sphere from going solid. Dip in a water bath. Slosh around. Remove from water and set aside in small bowl.

Place Xanthan Gum and Simple Syrup in glass and blend with clean immersion blender. Place Syrup mixture, Cider, and Vodka in shaker with ice and shake vigorously. Strain into an empty Tom Collins glass, spoon in several scoops of the cinnamon spheres, and stir to suspend in mixture. The properties of the Xanthan Gum will allow the spheres to stay suspended in the drink and provide a sharp cinnamon bite to counteract the sweet and sour cider. This drink provides just the right amount of kick to make your Halloween party fantastic.

Ubud is an absolute food heaven! I’m not exaggerating! From all the places in the world, this is my personal favorite when it comes to food, and I’ll tell you why: Vegan food everywhere, it is unbelievable!! And not only vegan, you can also find vegan raw (at Alchemy), vegan macro (at Clear Cafe), and vegan gluten free (at Sawobali)… just to name a few of these wonderful places to eat. And the best of all, it’s extremely affordable. I have never paid more than $10 for a meal in Ubud.

Cooking is at the heart of Balinese culture, and there is no better place than Ubud to take a cooking class. One of the most acclaimed cooking schools in Bali is Ketut’s Balinese Cooking Class.
