Some Kinda Good thumbprint cookies are filled with Green Pepper Jelly and Orange Marmalade for a festive St. Patrick’s Day picnic, mimicking the green and orange colors of the Irish flag.
Thumbprint cookies originated in Sweden. Known as Hallongrotta/hallongrottor in Swedish, the meaning literally translates, “raspberry cave.” I love these shortbread-style, buttery cookies because they’re so easy to make and can be customized to fit any occasion.
Fill them with your favorite jam – use raspberry jalapeno, blackberry, peach – get creative! Today, I’m using green pepper jelly with a kick and sweet orange marmalade to mimic the colors of the Irish flag for St. Patrick’s Day! Remember to let your dough chill for at least an hour before rolling into balls.

Some Kinda Good Thumbprint Cookies
2/3 cup granulated sugar
1 cup butter, softened
1 tsp pure vanilla extract
2 Cups All-Purpose Flour
1/2 cup of your favorite jam, such as:
Green Pepper Jelly
Orange Marmalade
In a mixing bowl, combine the sugar, butter and vanilla. Beat at medium speed until creamy, 2 o 3 minutes. Add flour, and mix until well incorporated, 2 – 3 minutes. Form the dough into a ball, wrap in plastic wrap, and refrigerate at least 1 hour.
Pre-heat the oven to 350 degrees. Shape the dough into 1 -inch balls. Place the balls 2 inches apart on ungreased cookie sheet. Using your thumb, make a small indentation in the center of each cookie, pressing gently until the edges crack slightly. Fill each cookie with 1/4 teaspoon of jam. Bake for 15 minutes. Let cool. Enjoy!

Raspberry Shortbread Thumbprint Cookies

Raspberry shortbread cookies yum! If you are craving a sweet dessert that is festive with a refreshing burst of flavor this is the cookie for you. It’s baking season and realistically there is only so much chocolate and caramel a person can have. At least that is what the dentist tells me.
I love rich and sweet desserts as much as the next person, but sometimes I was something more refreshing. Raspberry shortbread thumbprint cookies are perfect when you feel like mixing it up a bit. Not to mention you likely already have everything you need in your kitchen.
If you don’t have raspberry jam in your refrigerator, pick some up the next time you are at the store. You never know when you might feel like something sweet and fruity this winter. Any jam will work, but strawberry thumbprint cookies just do not have the same appeal.
For this recipe, I used regular raspberry jam with the seeds. That’s because the seedless variety was sold out. However, a seedless jam will make the filling more smooth. I didn’t mind the seeds, but if you can’t stand pulp in your orange juice then opt for seedless jam. Either way these raspberry shortbread thumbprint cookies are delicious.
I used the jam as is, no extra sugar. It is already sweet enough without any help. The shortbread is chewy and buttery. The raspberry and shortbread flavors blend together perfectly. These thumbprint cookies are great for making in large batches for gifting or school parties. A dozen in a pretty tin makes a great gift for your neighbors. Not everyone likes chocolate and these raspberry shortbread cookies are a great alternative.

A buttery and chewy shortbread cookie filled with a refreshing raspberry filling.
Cookie

Raspberry Almond Shortbread Thumbprints
Ingredients For the dough: 1 cup unsalted butter, room temperature ⅔ cup granulated sugar ½ teaspoon almond extract 2 cups all-purpose flour ½ cup seedless raspberry jam pinch of salt For the glaze: 1 cup powdered sugar 2-3 teaspoons water (more or less as needed for drizzling consistency) 1½ teaspoons almond extract
Instructions In a large mixing bowl, combine the butter, granulated sugar and ½ teaspoon almond extract. Beat at medium speed until the butter mixture is creamy. Scrape sides of mixing bowl as needed. Reduce the speed to low and gradually add the flour and a pinch of salt. Mix until well blended. Cover and refrigerate the dough for 1 hours. Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Shape dough into 1-inch balls and place 2 inches apart on the prepared pan. Make an indentation in the center of each cookie with your smallest finger (or thumb if you want a larger pocket). The edges of the dough may crack slightly. Fill each with a heaping ¼ teaspoon jam. Bake for 15 minutes or until edges are lightly browned. Let the cookies stand 1 minute before removing to a cooling rack. Cool completely. Combine the glaze ingredients in a small bowl and whisk until smooth. Drizzle over cookies and allow them to set. Notes Adapted from a Land-O-Lakes recipe I used unsalted butter in my recipe. Please check the dough to make sure it is salty enough for your taste. Perhaps adding ¼ teaspoon of salt instead of a pinch would help if you feel it needs more. I always bake with unsalted butter and do not like the taste of salted. We love the Land-O-Lakes brand of butter so this recipe was tested with their unsalted product. NOTE - after receiving a couple of comments about the cookie spreading too much, I thought I would mention a few tips - 1. Make sure you are using Land-O-Lakes butter. That is the only one I have tested these cookies with. 2. Make sure the dough is well chilled before making the dough balls. 3. Do not smash the entire dough ball flat when making the indentation. Use a small finger and push straight down into the center of the cookie. DO NOT MAKE THE INDENTION TOO DEEP. The bigger the whole, the wider the cookies will spread. Please see the photos for reference. Even though they are called thumbprints, if you use your thumb they may not spread correctly and hold the jelly in tact. Raspberry Almond Shortbread Cookies
A buttery and chewy shortbread cookie filled with a refreshing raspberry filling.
Cookie
1 cup softened butter
2/3 cup granulated sugar
½ tsp almond extract
2 cups flour
Filling
½ cup raspberry jam (seedless if you can find it)
Sugar to sprinkle on top
Icing
1 cup powder sugar
3-5 tsp water
1) Cream butter in a medium bowl.
2) Mix in 2/3 cup sugar and ½ tsp almond extract.
3) Stir flour into butter mixture slowly. Mix until flour is well combined. You may need to knead it by hand at the end.
4) Cover and chill for 1 hour.
5) Pre-heat oven to 350 degrees
6) Remove dough from fridge. Shape dough into 1-inch balls and set on a lined cookie sheet. Press your thumb into the center of each ball to make an indent about the size of a quarter. The ball will flatten a bit and crack at the edges.
7) Fill a sandwich bag with ½ raspberry jam. Squeeze out the air from the bag and cut off the tip of one corner. Pipe the jam into the center of the cookie.
8) Sprinkle with sugar. Bake for 15 minutes or until edges turn slightly golden.
9) Let cookies cool fully on a wire rack.
10) Pour 1 cup powdered sugar into a bowl. Whisk in water 1 tsp at a time until the icing can be easily drizzled from your whisk. Drizzle cookies with icing then watch as they disappear in front of your eyes (you might want to sneak one first).
Store in an air tight container in the refrigerator for up to 1 week.

Raspberry shortbread cookies yum! If you are craving a sweet dessert that is festive with a refreshing burst of flavor this is the cookie for you. It’s baking season and realistically there is only so much chocolate and caramel a person can have. At least that is what the dentist tells me.
