Saffron Parsnip Soup (Vegetarian)

Beautifully smooth and velvety, this hearty Saffron Parsnip Soup takes it suave fragrance and gorgeous hue from the warming spice, and is thus deliciously comforting on a cold and rainy night. Happy Tuesday!
Ingredients (serves 3 to 4):
1 1/2 tablespoon unsalted butter
1 1/2 tablespoon olive oil
2 shallots
2 good pinches saffron threads
1 litre/4 cups boiling water
3 large (or 4 medium) Garden Parsnips聽
1 heaped teaspoon coarse sea salt
1/2 teaspoon freshly cracked black pepper
In a large pot over a medium flame, melt butter with olive oil.
Peel and finely chop shallots.
Once the butter is just foaming, add chopped shallots, and cook, a couple of minutes until softened.
Stir in a jolly good pinch saffron threads, and cook, another couple of minutes.
Place remaining saffron threads in a medium bowl, and cover with boiling water. Set aside.
Thoroughly scrub and rinse Garden Parsnips, and peel them if necessary (their skin is particularly thin when they've just been dug up, so they needn't be peeled).
Cube Parsnips, and stir into the pot, coating well in butter and saffron.
Season with coarse sea salt and black pepper. Cover with a lid, and cook, about 5 minutes.
Remove the lid, and stir in saffron water. Bring to the boil.
Once boiling, cover with the lid, reduce heat to medium-low, and simmer, 25 to 30 minutes, until Parsnips are very tender.
Spoon the whole lot into a blender, and process until very smooth, adding more water, if necessary.
Pour soup back in the pot and heat over a medium flame.
Serve Saffron Parsnip Soup hot.

Saffron Prawn Tagliatelle

These beautifully creamy and flavourful Saffron Prawn Tagliatelle are both simple enough and special enough to be cooked for a date night. It won't tie you to the oven, and it shall impress! Happy Saturday!
Ingredients (serves 2):
a generous pinch saffron threads
1/2 cup boiling water
7 tagliatelle 'nests'
1 1/2 tablespoon olive oil
a small onion
1/2 teaspoon dried basil
180 grams/6 ounces fresh prawns
1 garlic clove, minced
1/4 teaspoon fleur de sel or sea salt flakes
1/2 teaspoon freshly cracked black pepper
1/2 lemon
3/4 cup cr猫me fra卯che or sour cream
Spoon saffron threads into a small bowl. Pour boiling water over the saffron, and allow to infuse and turn bright yellow, 5 minutes.
Plunge tagliatelle 'nests' in a large pot of salted boiling water, and cook according to package's directions, generally 9 to 11 minutes until al dente.
Meanwhile, heat olive oil over medium-high heat in a large, deep skillet.
Peel and finely chop onion, and add to the skillet. Fry, a couple of minutes.
Stir in dried basil, and cook, 1 minute more.
Peel prawns, and add them to the skillet. Cook, stirring often, until they turn bright pink.
Stir in garlic, and cook, 1 minute more.
Season with fleur de sel and black pepper.
Thoroughly squeeze in lemon juice, to deglaze, scrapping the bottom of the skillet with a wooden spoon.
Then, stir in reserved saffron water. Bring to a slow boil, and reduce heat to medium. Simmer until liquid reduces by half, then stir in cr猫me fra卯che.
Drain tagliatelle, saving 1/3 cup of its starchy water, and add both to skillet. Give a good stir, coating the pasta generously in the creamy saffron sauce, allowing it to thicken slightly.
Serve Saffron Prawn Tagliatelle hot, with a glass of chilled dry white wine, like a Marlborough Sauvignon Blanc.
