On the subject of demos, are all the problems that exist for demos also true for E3/other trade shows playable demos? Is it "easier" to fudge things with E3 as you get to control what exactly the player can do/see? How many of the "demos" we are shown are actually just scripted and prerendered cutscenes on how the developers hope the game will be like at launch?
Let me try to answer your questions individually.
On the subject of demos, are all the problems that exist for demos also true for E3/other trade shows playable demos?
The set of requirements are not entirely the same. While both exist to build hype, a playable demo released to the public must be able to stand up to extended play and scrutiny. There is a stability requirement that, while looser than the final release, is still much tighter than a trade show or press build. For example, we can run debug builds at trade shows and press events while player-facing demos cannot be debug builds. We can control the hardware specs and run press builds on the beefier dev kits while the game might not yet have been optimized enough to run on home consoles.
Is it "easier" to fudge things with E3 as you get to control what exactly the player can do/see?
Yes, it is much easier to do this. Sometimes our press demos are not a single demo, but multiple demos of different individual gameplay systems. The integration of game systems into a cohesive whole may not have been completed yet, but the individual parts are stable enough to show off. For the “behind closed doors” demos, we often have a developer drive and follow a specific path because the rest of the level and game is so fragile it doesn’t work. We also have people giving the demos on the show floor to direct players while they are trying the demos. The exhibitors at trade shows often have instructions to direct players to specific areas while playing the demo and to reset the demo machines quietly when they inevitably crash or lock up.

Far more than you think. There are plenty of stories of developers at trade shows holding a disconnected controller while a fully scripted on-rails demo plays for their presentation. I have long suspected that all big publisher-streamed press conferences from E3 (e.g. EA, Activision, Sony, Microsoft, etc.) are entirely on rails and use nothing actually playable because the risk of crashing or freezing during a live press event is too great.
