India is a country of diversity, culture and cuisine. When it comes to cooking, no nation has mastered the art of the big batch quite like India. From festivals to temples, from schools to weddings, millions of people are fed every day with delicious and nutritious food prepared in massive quantities. Here are some examples of how the world’s biggest batches of food are made in India.
Onam Festival
Onam is a harvest festival celebrated in Kerala, a state in southern India. It is also known as the festival of rice, as rice is the staple food of Kerala. Onam is celebrated with a grand feast called sadya, which consists of 26 dishes served on a banana leaf. The sadya is traditionally prepared by women in large groups, using huge pots and pans over wood-fired stoves. The dishes include rice, sambar (a lentil and vegetable stew), avial (a mixed vegetable curry), rasam (a spicy soup), pickles, chutneys, papadums and payasam (a sweet pudding). The sadya is eaten with the right hand, without any cutlery.
One of the largest sadyas in the world is organized by Thrikkakara Temple in Kochi, Kerala. The temple feeds around 150,000 people every year during Onam. The temple has a team of 500 volunteers who cook and serve the food. They use 12,000 kg of rice, 6,000 kg of vegetables, 1,500 kg of lentils, 500 kg of ghee (clarified butter), 300 kg of jaggery (unrefined sugar) and 200 kg of coconut oil to make the sadya. The temple also provides free drinking water and banana leaves for the guests.
Golden Temple
The Golden Temple, also known as Harmandir Sahib, is a Sikh shrine located in Amritsar, Punjab. It is one of the most sacred and visited places in India. The Golden Temple has a tradition of serving free food to anyone who visits, regardless of their religion, caste or background. This service is called langar, which means communal kitchen. The langar was started by Guru Nanak, the founder of Sikhism, who believed in equality and charity.
The Golden Temple langar feeds around 100,000 people every day. The langar operates 24 hours a day, seven days a week. It has a staff of 300 people and thousands of volunteers who help with cooking, serving and cleaning. The langar uses 12,000 kg of wheat flour, 1,500 kg of rice, 13,000 kg of lentils, 2,000 kg of vegetables, 1,600 kg of sugar and 500 kg of ghee every day. The food is cooked in large cauldrons over wood-fired stoves. The food is simple but tasty, consisting of roti (flatbread), dal (lentil soup), sabzi (vegetable curry), kheer (rice pudding) and tea. The food is served on steel plates and bowls, which are washed by volunteers using eco-friendly methods.
Akshaya Patra
Akshaya Patra is a non-governmental organization that provides midday meals to school children in India. It was founded in 2000 by Madhu Pandit Dasa, a monk from ISKCON (International Society for Krishna Consciousness). The name Akshaya Patra means “inexhaustible vessel”, which refers to a mythical pot that could produce unlimited food. The mission of Akshaya Patra is to fight hunger and malnutrition among children and to encourage them to attend school.
Akshaya Patra is the world’s largest free-school-meal provider, feeding around 2 million children every day. It operates 52 kitchens across 12 states in India. The kitchens are equipped with modern technology and hygiene standards. The food is cooked using steam boilers and conveyor belts. The food is vegetarian and follows the local cuisine and preferences of each region. The food includes rice, roti, dal, sambar, khichdi (rice and lentil porridge), pulao (rice pilaf), curd (yogurt), vegetable curry and sweet dish. The food is packed in stainless steel containers and transported to schools in customized vehicles.

Meet Raksha, Spandana and Suprita, 4th graders from SVS Vidyajyoti. I had the honour of visiting their school as a part of @theakshayapatrafoundation to serve them mid-day meals. Majority of children do not go to school because of hunger. What The Akshaya Patra Foundation of ISKCON is doing is that it provides free mid-day meals to 1.5 million children each day so that no child can miss the opportunity of education solely because of hunger. Words cannot express the gratitude I felt for what I have in my life when I see the struggle theirs is. They were so genuinely curious to learn and come to school that they finished their lunch quickly and returned back to their classes. In the interaction session that followed, we gave them a few essay topics to write on, in English. The interest they showed in learning the language amazed me and made me more determined to make that happen. I shall always remember August 4th, 2017 as the day I start giving back to the society. I am grateful for the life that He has given me and will promise myself that I will remember the duties in this world and put those into action. Akshayapatra meaning inexhaustible vessel, is an object from Hindu mythology. It was a wonderful vessel given to Yudhishthira by the Lord Surya, which held a never-failing supply of food to the Pandavas every day. When the Pandavas began their exile in the forest, Yudhishtra was despondent at his inability to feed the holy sages and others who accompanied him. At this, Dhaumya, the priest of the Pandavas, counselled him to pray to Lord Surya. Pleased with Yudhishtira's prayers, Lord Surya blessed him with the Akshaya Patra, a vessel that would give unlimited food every day till Draupadi finished eating. Lord Krishna also once partakes food from the Akshaya Patra, when sage Durvasa arrived at the Pandavas' place with his disciples. When Durvasa arrived, there was no food left to serve him, since Draupadi had already finished eating. The Pandavas became anxious as to what they would feed such a venerable sage. While Durvasa and his disciples were away at the banks of the river bathing, Draupadi prayed to Lord Krishna for help. As always, they were once again saved by Him, who partook of a single grain of rice from the Akshaya Patra and announced that He was satisfied by the meal. Surya gifts Yudhishthira the Akshayapatra
Akshaya Patra (Sanskrit: अक्षयपात्र) meaning inexhaustible vessel, is an object from Hindu history. It was a wonderful vessel given to Yudhishthira by the sun-god Surya which held a never-depleting supply of food to the Pandavas every day.
Legend:
When the Pandavas were in exile in the forest, they received visits from many dignitaries, sages, kings and ministers who were horrified at the turn of events. They came to discuss matters with the Pandavas and show their support. Draupadi found it very difficult to extend the customary hospitality to these numerous guests because the Pandavas were destitute in exile and living in the forest where nothing was available.
Sages and subjects of Indraprastha too followed Dharmaraja, and he could not send them back. The Pandavas were worried as they had only a little to eat and weren’t capable of feeding the sages. Yudhishthira was devastated as he could not bear not keeping his followers well fed and satisfied. So he requested the sages to return to Indraprastha, to which the sages commanded him to perform penance to the Sun God, Surya. Dharmaraja performed meditations and prayed Surya with utmost devotion which pleased the Sun God who appeared before him. Yudhishthira was so dedicated that he did not realise the presence of Surya and was still indulged in the penance. Pleased by the everlasting devotion of the eldest Pandava, the Sun God provided him the marvellous Akshaya Patra.
With the power of Akshaya Patra, all the sages ate to satisfaction as it would provide unlimited amount of food to eat. Until Draupadi, the last person to eat among the Pandavas feasted, the Akshaya Patra would not be emptied. Pandavas were very happy and contended that they can survive in the forests without any worries with the Akshaya Patra in their possession. Eventually, many sages would visit the hermitage of the Pandavas and were never unsatisfied with their hospitality.

I had an opportunity to take a look at how their breakfast meals were being prepared for the kids at government schools in and around Chennai. I must say that I am really impressed with the way they are able to serve hygienic and quality food. I had quite a pleasant experience serving food to the kids.
