Establishing a “Family Code Of Conduct” or a “Family Business Philosophy” that all members ‘sign off’ on is challenging even though the concept seems so simple. In ‘hand-crafting’ mode, the machinery is as “gentle as a human hand”. Here, Garnacha being adjusted to give 70%+ whole berries to allow the skins to ‘release’ their color and phenolic compounds when ‘they’ are ready rather than ‘mechanically macerating them’ (i.e.: pulverizing the berries to force the crushing of the skins). This approach causes the resultant wine to show a greater level of ‘finesse’ and softness on the palate. While working the wine market in New York City, the contrasts of culture are remarkable. It reminds me a lot of growing up in the LA area with many more extremes. Each one of the Burroughs is unique and fascinating but my favorite (and the one I relate to most) is Brooklyn. From Dumbo & Brooklyn Heights to Williamsburg & Fort Greene, the variations, people, history & arts are displayed in every step just by walking between the areas I mentioned (and I have walked all of them). The food, conversations, cultures, music, and “vibe” is for the most part congenial & cooperative. With winemakers and growers of ultra-premium to luxury style wines, we spend an incredible amount of time discussing Winery ‘process’ and not nearly enough time discussing vineyard detail. Over the years, deficit irrigation, sunflecking, cation-exchange capacity (CEC’s), diurnal temperature fluctuation and a myriad of other relevant & critical topics are so key to taking a vineyard to its overall capacity. Of course, ‘big-house’ grape growing and ROI’s per acre nearly always create conflicts for a grower who is not also the maker of a luxury product.....Here is a fast growing shoot tip with obvious tendril push of which is a tender subject between growers and ‘makers’. I, for one, would rather see this during berry-sizing than have short shoots and a lack of mature leaf surface area to properly or completely develop phenolics in the finished grape....this is where I believe we need to refine our conversations. We speak often of finished wine but not nearly enough of ‘finished grapes’. Thank goodness for technology leading the way in measuring the effects of viticultural practices on phenolic composition.
