It’s Bourdain Day and I made a recipe from his Appetites cookbook that my sister bought me. Tony was one of my favorite tv chefs. I’ve watched his shows for years and loved his take on everything from a Michelin star restaurant to a mom and pop shop in nowhere Southwest Missouri. When I plan my meals each night I always see what we have in the fridge and pantry before deciding. I was thumbing through his cookbook last night and the Meat Loaf stood out. We had most of the ingredients! I only spent $15 for tonight’s dish. Here’s the pics of tonight’s meal. I didn’t use veal and veal stock like the recipe called for because it’s not readily available. I replaced the veal stock with chicken and the ground veal with pork. Although I can get ground veal, I used the pork I had in the fridge. This meal turned out so damn good. I sautéed the veggies and made the gravy on a @biggreenegg . @anthonybourdain Appetites Cookbook Portuguese Kale Soup calls for duck stock but I'm using homemade chicken stock. Instead of dried kidney beans I'll use my own homemade kidney beans I froze. Instead of Portuguese sausage I'll use fresh chicken chorizo sausage. I don't have hammock so I'll use ham chunks. Instead of kale I'm using chard that I grew and froze. No sherry vinegar so I'll use pomegranate vinegar. This is how you save $$. You use what you have. You preserve food. You use fresh ingredients local to you.
