I first did a 🥥 fat infusion then a 🍍 infusion on an delicious aged rum I was gifted. While a bit extravagant, in my humble opinion, the end result was delicious . Recently before a road trip I noticed a few ounces of the infused Rum left in my fridge so I grabbed it for the quick journey to Palm Springs ~ here’s what happened and I definitely ain’t mad at it . Thanks to 🍸 @karlo_duzevic • • • • • Hemingway + Bubbles Carbonated Milk Punch . . . This is the first drink in collaboration with a colleague, a pastry chef, Tibor. The idea was born one evening on the balcony after work, and yesterday we turned the idea into a glass. The inspiration behind the drink comes from the classic, Hemingway Daiquiri. So Tibor made a jelly garnish that consisted of white rum, maraschino, grapefruit juice and fruit tea. And I made a milk punch consisting of blanco and anejo rum, maraschino, grapefruit skin cordial, blend of acids, fruit tea and milk of course. After clarification, I added water and carbonized everything together in a siphon. Today's Sloe Gin, which hails from Germany's @Burgendrinks Distillery 🇩🇪 is an example of the latter, balancing the right amount of sweetness with a full fruity flavor, nice hint of acidity and an aromatic evolution that's strong throughout. 👅 And will you look at that fine artwork by my buddy @ginginginde? . Combining Sloe Gin in cocktails actually isn't 'that' hard. 🙌 It has the tendency of adjusting itself quite easily to many base spirits, and today's mix with Peruvian Pisco was no exception. 🇵🇪 Some White (not dry!) Vermouth to give it extra length and Orange Bitters 🍊 to tie it all together. . Stir all the ingredients together and pour in a DOF glass over a large ice cube. . . Rum old fashioned is not really my thing, yet. A few weeks back though, I saw this rum based banana old fashioned with chocolate bitters that I simply could not resist. So, I tweaked the proportions and added a few ingredients to the mix and came up with this little number, which I think turned out pretty tasty. Scotch, Rum and Sherry make a perfect base for the sweet banana and the bitter chocolate to shine through while not been overly cloying. As well as an in-depth discussion about the historical and cultural context of Latin spirits, this beautifully photographed book contains a fantastic collection of recipes featuring tequila, rum, pisco and more. I would strongly encourage you to pick up a copy... in the meantime, here is one of the many recipes I have made so far, inspired by a visit Mix made to St. Lucia. Cheers! . . QUITE RIGHTLY 2 1-inch pieces yellow capsicum 1 oz Rhum JM Blanc 3/4 oz Chairman's Reserve Rum 1/2 oz verjus 1/2 oz Yellow Chartreuse @chartreuse_dk 1/2 tsp Crème de Pêche @giffard_liqueurs_syrups 3 drops Bittermans Celery Shrub 1 dash saline solution . . Muddle the yellow capsicum slices at the bottom of a mixing glass. Add all other ingredients and stir with ice. Shake vigorously for 10 seconds. Pour and strain into a chilled coupe. Garnish with your fanciest mini paper plane. Thanks to 🍸 @socialgingirl • • • • • C O M B O H E A V E N Ever find a cocktail name that just elicits such memories for you? One of my favourite meals in South Africa was a Surf & Turf. In SA that was a sizeable steak with some equally sizeable prawns. It’s one of those meals where you can’t quite decide what you feel like...a dip in the ocean or tending to your carnivorous tastes. I really am one of those people who likes a spread or a platter with choices. I am not sure whether that is me being indecisive or taking the approach of variety is the spice of life. I have played around with a Surf & Turf cocktail I found on @diffordsguide It calls for an Old Tom gin and one I recently got to know is from the team @rockrosegin It’s a Grapefruit Old Tom and you all know what reaction that was going to get from me being one of grapefruit’s biggest fans! They use fresh pink grapefruit, placing it into the botanical basket to vapour infused alongside their other botanicals. It is sweetened using muscovado sugar. This gin is for citrus fans like myself with the zesty grapefruit coming through strong on the nose with pine notes from the juniper. This comes through on the palate too but unlike other Old Toms I have tasted and own, this is less sweet but in a pleasant way. 45ml @rockrosegin Grapefruit Old Tom 22.5ml @vermouthdolin Dry Vermouth infused with clove, cinnamon and orange peel 15ml fino sherry 7.5ml @muyu_liqueurs Chinotto 1 dash angostura bitters Garnish - lemon peel Glass - @libbeyglass_europe Speakeasy Nick & Nora I am off, virtually that is, to my first @negroniclubuk night with @sacredgin whose Old Tom I have in my homebar. I cannot wait to learn all about their gins and vermouths whilst sipping on some delicious negronis! Thanks to 🍸 @chenaholic • • • • • Do you want a good arm workout that comes with a tasty cocktail reward? Then you want to make a Ramos Gin Fizz! I’ve made a few of these on my page in the past and still stand on it being one of the hardest cocktails to make. For this, I finally used the famous @morgan_raelin method. Her method adds a few extra steps but the result is totally worth it. I was pretty proud that I achieve the rising lipstick foam effect when I poured the remaining cocktail in! - Today’s Gin Fizz uses @fabrizia_limoncello Blood Orange Liqueur. I sweetened it further with some leftover syrup from a maraschino cherry jar. Give this one a try! But be sure to stretch before you make it. Cheers friends, stay safe, stay healthy. - Blood Orange Gin Fizz - 1 oz London Dry Gin 1 oz Blood Orange Liqueur @fabrizia_limoncello 1 oz Heavy Cream .5 oz Lime Juice .5 oz Lemon Juice .5 oz Maraschino Cherry Syrup 3 dash Orange Flower Water Egg White 2 oz Club Soda - Add all ingredients except soda into a shaker. Dry shake for 2 minutes, then add 4 small ice cubes and shake until fully dissolved. Pour club soda into a chilled Collins glass, the pour cocktail to top. Put drink into a freezer for 3-4 minutes. Take out of the freezer and pour remaining cocktail in to lift the foam. Thanks to 🍸 @servedbysoberon • • • • • RIPPLES IN THE SAND - 45ml/1.5oz Rhum Clement VS - 15ml/0.5oz Espolon Reposado Tequila - 30ml/1oz Lime Juice - 15ml/0.5oz Giffard Piment d' Espelette Liqueur - 10-15ml/0.33-0.5oz Agave Syrup - - - - - HOW: Shake all with ice / Double strain in rocks glass filled with fresh ice / Garnish with a lime wedge partially covered in Espelette Chili Powder. - - - - - When @giffard_liqueurs_syrups releases a new liqueur in their Premium Range and ask you if you want to get creative with it, you get excited. 🤩 When they inform you it's a Chile liqueur with Agricole Rhum added to it, you shed a tear of joy 😍. . Today's cocktail is essentially the lovechild of a Spicy Margarita and an Agricole Daiquiri. 🍹 It's a split-base drink with lightly aged Rhum Agricole (@rhumclement) and a Reposado Tequila (@espolontequila) 🇲🇽. .
