Vegan Carrot Banana Bread

This Vegan Carrot Banana Bread is a moist, flavorful loaf that’s easy to make and perfect for a healthy treat. Ingredients:

2 ripe bananas (mashed)

1 cup grated carrots (about 2 medium carrots)

½ cup coconut oil (melted) or neutral oil

½ cup maple syrup or any liquid sweetener

¼ cup plant-based milk (almond, soy, or oat)

1 tsp vanilla extract

1 ¾ cups all-purpose or whole wheat flour

1 tsp baking soda

1 tsp baking powder

1 tsp cinnamon

¼ tsp nutmeg (optional)

¼ tsp salt

Optional: ½ cup chopped walnuts or raisins

Instructions:

Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.

In a bowl, mash the bananas and mix with carrots, oil, syrup, milk, and vanilla.

In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.

Combine wet and dry ingredients until just mixed. Fold in optional add-ins.

Pour the batter into the pan and smooth the top.

Bake for 50-60 minutes, or until a toothpick comes out clean.

Let cool, slice, and enjoy!
