Biko/Rice cake

WHAT IS BIKO?

Biko is a type of rice cake from the Philippines, it is a dessert that is made of coconut milk, sugar, and glutinous rice that is topped with latik (in english coconut caramel) on top of it.

PROCEDURES ON HOW TO MAKE BIKO

STEP 1. Cook rice with water in a pot or rice cooker. (for 30 minutes)

STEP 2. Meanwhile, simmer ½ cup of coconut cream in a pan. Cook until cococnut cream curds starts to separate from the coconut oil and turn golden brown. Strain and set aside. (15 mins)

STEP 3. Combine remaining ½ cup of coconut cream , sugar, All Purpose Cream and coconut oil in a large pan. Add cooked rice and gently mix until well-mixed. (15mins)

Step 4. Transfer on a serving container and top with the Latik sauce we made. Serve warm. (5mins)

INGREDIENTS FOR BIKO

1. Glutinous rice

2. Coconut milk

3. All purpose cream

4. Brown sugar

TIME TO MAKE THE LATIK/ COCONUT CARAMEL SAUCE

STEP 1. .In a saucepan add the coconut milk, sugar and salt.

2. Bring to a boil until mixture is dark brown and very thick.

STEP 3. Spread it on top of the biko/rice cakes then let if rest for. (about 5 minutes)
