Recently found some time to visit local whisky maker @starwardwhisky at their spacious distillery and bar in Port Melbourne. I made my first visit to Starward a few years ago when they were based in Essendon and I have been a fan ever since. This was my first visit to their Port Melbourne location and its a fantastic one at that. Love the open design that houses the bar and sitting area, and offers a peak into the distillery itself. Next time I need to take the tour! Such a welcoming space with a great crew there to educate you in the ways of Starward. During my visit I tried a few of the New World Projects they had on offer, including the Cognac cask that I have been dying to try since @whiskyandalement posted the sneak peak sample they got to try a few months ago. In short I got myself a bottle... seeing as there are only 252 bottles I might have to go back and get some more before they are all gone!!! Those that know me know I love my whisky and cognac. So this was a MUST TRY for me! I’m really glad I stalked Starward’s Insta to find out when I could get it haha! This evening I pulled out a Trignac 2012 from Brouwerij Van Honsebrouck (aka the Castle Brewery), and if you know anything about their strong 11% Kasteelbier Tripel/biére du Chateau, then image it aged on Cognac barrels - a powerhouse boozy fruity Tripel steeped in vinous woody Cognac... Tripel cognac —> Trignac; a bit too boozy for me, but still very nice.
