Vegan Orange & Walnut Mixed Salad

Ingredients: - 100g mixed salad leaves - 2 large oranges, peeled and segments - 2 medium tomatoes, sliced - 1 cucumber, sliced - 1 small red onion, thinly sliced - 50g walnuts, toasted - A handful of black olives - 2 tbsp olive oil - 1 tsp Maple syrup - 1 tsp Dijon mustard - 1 tsp Apple cider vinegar - Salt and pepper, to taste - Fresh parsley, chopped, for garnish

Method: 1. Arrange the mixed salad leaves in a large serving bowl or platter as the base. 2. Evenly distribute the orange segments, tomato slices, cucumber slices, and red onion over the greens. 3. Scatter the toasted walnuts and black olives across the salad. 4. In a small bowl, whisk together the olive oil, Maple syrup, Apple cider vinegar, and Dijon mustard until smooth.
