These simple Red Velvet Sandwich Cookies are ideal for Valentine's Day or any other special occasion. The soft and chewy red velvet cookies are filled with luscious cream cheese frosting and make an ideal treat for your loved ones.
Ingredients: 1 box red velvet cake mix. 2 large eggs. 1/3 cup vegetable oil. 1 teaspoon vanilla extract. 1/2 cup powdered sugar, for rolling. 1/2 cup cream cheese frosting. Sprinkles for decoration.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Put the eggs, vegetable oil, vanilla extract, and red velvet cake mix in a bowl. Mix everything together well. Make balls out of the dough about the size of a tablespoon. Make sure each ball is well covered in powdered sugar as you roll it in it. Spread the dough balls out on the baking sheet that has been prepared, leaving about 2 inches of space between each one. With the back of a spoon or your fingers, make each ball a little flatter. Put it in an oven that is already hot and bake for 8 to 10 minutes, or until the edges are set. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way down. After the cookies are cool, put a teaspoon of cream cheese frosting on the flat side of one and then put another cookie in between them. Add sprinkles to the edges of the frosting to make them look nice. Do the same thing with the rest of the cookies. Serve these tasty Red Velvet Sandwich Cookies and enjoy them!
