A colorful and tasty salad with jerk-seasoned shrimp, nutty quinoa, hearty black beans, sweet pineapple, and crunchy corn. A zesty lime dressing brings it all together.

Ingredients: 1 lb shrimp, peeled and deveined. 2 tbsp jerk seasoning. 1 cup quinoa, cooked. 1 cup black beans, cooked. 1 cup pineapple chunks. 1 cup corn kernels. 1 red bell pepper, diced. 1/4 cup red onion, finely chopped. 1/4 cup cilantro, chopped. 2 tbsp olive oil. 2 tbsp lime juice. Salt and pepper to taste.

Instructions: In a bowl, toss shrimp with jerk seasoning until evenly coated. Heat olive oil in a skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and cooked through. Set aside. In a large bowl, combine cooked quinoa, black beans, pineapple, corn, red bell pepper, red onion, and cilantro. Add cooked shrimp to the bowl. Drizzle with lime juice and olive oil. Season with salt and pepper to taste. Toss everything together until well combined. Serve immediately or refrigerate until ready to serve.
