A tasty take on the classic Caesar salad with crispy shrimp covered in coconut, giving this beloved dish a tropical feel. Perfect for a meal that is light and cool.

Ingredients: 1 pound large shrimp, peeled and deveined. 1 cup shredded coconut. 1 cup panko breadcrumbs. 2 eggs, beaten. 1/2 cup all-purpose flour. Salt and pepper to taste. 2 tablespoons vegetable oil. 8 cups Romaine lettuce, chopped. 1/2 cup Caesar dressing. 1/4 cup grated Parmesan cheese. 1/4 cup croutons. Lemon wedges for garnish.

Instructions: Shred the coconut and mix it with the panko breadcrumbs in a shallow bowl. First, coat each shrimp in flour. Then, dip it in beaten eggs. Finally, cover it with the coconut and breadcrumb mixture. Make sure they have a good coat on. Put the vegetable oil in a big skillet and heat it over medium-high heat. It should take about two to three minutes on each side to fry the coconut shrimp until they are golden brown and crispy. Take it off the heat and set it aside. Chop up some Romaine lettuce and put it in a large salad bowl. Add the Caesar dressing and grated Parmesan cheese. Toss the lettuce around a lot to cover it all. Place some Caesar salad on each plate, and then add some crispy coconut shrimp on top of each one. Add croutons to the salad and top it off with lemon wedges. Serve your Coconut Shrimp Caesar Salad right away and enjoy it!

A delightful seafood salad featuring lump crab meat, crisp veggies, and a zesty mayonnaise dressing. Perfect for a light and refreshing meal.

Ingredients: 8 oz lump crab meat. 1/2 cup mayonnaise. 1/4 cup diced celery. 1/4 cup diced red bell pepper. 1/4 cup diced red onion. 1 tsp Dijon mustard. 1 tbsp lemon juice. 1/2 tsp Old Bay seasoning. Salt and pepper to taste. Lettuce leaves for serving. Cherry tomatoes for garnish. Fresh parsley for garnish.

Instructions: In a bowl, combine lump crab meat, diced celery, diced red bell pepper, and diced red onion. In a separate bowl, mix mayonnaise, Dijon mustard, lemon juice, Old Bay seasoning, salt, and pepper. Fold the mayonnaise mixture into the crab meat mixture until well combined. Chill the crab salad in the refrigerator for at least 30 minutes before serving. Serve the crab salad on a bed of lettuce leaves, garnish with cherry tomatoes and fresh parsley. A delicious raspberry quark tart with a crunchy cookie base that's great for a dessert that's light and cool.

Ingredients: 200g digestive biscuits. 100g unsalted butter, melted. 500g quark. 200g raspberry jam. 100g fresh raspberries. 100g powdered sugar. 10g gelatin powder. 150ml hot water. Fresh mint leaves for garnish.

Instructions: Crush digestive biscuits finely and mix with melted butter. Press the mixture into the base of a tart tin to form a crust. Chill in the fridge for 30 minutes. In a bowl, mix quark, raspberry jam, fresh raspberries, and powdered sugar until well combined. Dissolve gelatin powder in hot water, then add it to the quark mixture and stir thoroughly. Pour the quark mixture over the chilled biscuit crust. Refrigerate the tart for at least 4 hours or until set. Garnish with fresh raspberries and mint leaves before serving.
