Duskbirds #16 | “Pourover” Originally Published: Thursday May 25th, 2023
I started sketching this around when I first started becoming more interested in brewing coffee at home. Which, like many, was during the 2020 pandemic – and also, like many, was largely facilitated by the wonderfully charismatic coffee YouTuber, James Hoffman.
Without intending it to, manually brewing a pourover soon became my morning routine – one I continue enjoying to this day!
This comic is also the first one I’m posting that was edited using Krita, a free & open-source painting program I’ve been trying out! I’m really enjoying it so far.

Tasting Notes: Apricot, Camomile, Cane Sugar
I drink a lot of coffee and the roaster I go back to most often is David Kim. Not only Is it local (Calgary), but the coffee is always enjoyable. Six labels are available : Pure, wild, Kiyalo, Duvixe, Sezita & what I have been drinking this week, Bohuma. Each has its distinct Profile. Bohuma is low in acidity and higher sweetness.
On First sip the impression you get is that apricot note. A very slight sweetness with the tartness of an early season stone fruit. I have brewed with the hairo v60 metal dripper & hairo v60 switch immersion dripper. Depending on the method it changes the flavour slightly but the core notes are the same.

Sorry I’m thinking about Kim’s coffee setup again and I’m picturing him making coffee for Kenta in the mornings 😵💫 And like bc pourover gives you more control over the variables that impact the coffee’s flavor, he would take the time to experiment and get it just perfect to Kenta’s tastes.
Like Kenta’s idea of the perfect cup of coffee completely transforms while he’s staying with Kim. And even when Kim shows Kenta how to do it himself, writes down the bean to water ratio, the timing of the steep etc—there’s a nuance to Kim’s pour that Kenta just can’t replicate. Like Kenta can make a good cup of coffee, maybe even a great cup of coffee, but it’s not the perfect cup of coffee unless it comes from Kim.
And if he’s grumpier on the days he doesn’t get that perfect cup, then what.

You may think that the biggest coffee freaks are the ones dropping thousands and thousands of dollars on home espresso setups. But no! That's just a stuff hobby. A gear hobby. Even the guy who bought two thousand dollars worth of puck prep tools and re-mineralizes his RO water cannot even hold a handle to the freaks over in the world of pourovers

I don't know or care if this is an unpopular opinion or what but I am not a fan of the Keurig/Nespresso machines. Just give me a goddamn kettle in my hotel room so I can make my own coffee and tea, I'll be happy. I bring my own anyway. Then the machines they have in hotel breakfast rooms and at the school where you just push a button for cappuccino, macchiato, whatever. Lame. I mean if it's part of a free breakfast or whatever, okay. But if I'm paying I'd like a decent coffee. Also I don't know if the Nespresso machine in my room is broken or if I am, but I have watched a YT tutorial from the company 3 or 4 times about how to use this particular machine and I can't get the pod to go in unless I lift up the lever to dispose of the used pod into the tank, otherwise it's blocked off. And how is one just supposed to know how to use one of these things? why am I wasting vacation time trying to figure out how to make a cup of coffee? I realize I am one of approximately 44 people in the world who does not have one of these things but ffs. Can we please get back to a civilized way of making coffee. Those regular old Mr. Coffee machines were just fine.
