Chicken Cacciatora & Butter Bean Mash and Button Champignons

Ingredients:
For Chicken Cacciatora:
4 chicken breasts or thighs
2 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
1 can (400g) diced tomatoes
1/2 cup chicken broth
1 tsp dried oregano
1 tsp dried basil
Salt and pepper to taste
Chopped fresh parsley for garnish
For Butter Bean Mash:
2 cans (400g each) butter beans, drained and rinsed
2 tbsp butter
2 cloves garlic, minced
Salt and pepper to taste
For Button Champignons:
250g button mushrooms, cleaned and sliced
2 tbsp butter
2 cloves garlic, minced
Salt and pepper to taste
Instructions:
Prepare the Chicken Cacciatora:
Season chicken breasts or thighs with salt and pepper.
Heat olive oil in a large pot over medium heat. Add chicken and cook until browned on both sides. Remove from pot and set aside.
In the same pot add onion and garlic. Cook until softened.
Add diced tomatoes, chicken broth, oregano, and basil. Stir to combine.
Return chicken to the pot . Cover and simmer for about 20-25 minutes, or until chicken is cooked through and tender.
Garnish with chopped parsley before serving.
Make the Butter Bean Mash:
In a saucepan, melt butter over medium heat. Add minced garlic and cook until fragrant.
Add butter beans and mash with a potato masher until desired consistency is reached.
Season with salt and pepper to taste.
Prepare the Button Champignons:
In a separate pan, melt butter over medium heat. Add minced garlic and cook until fragrant.
Add mushrooms and sauté until golden brown and tender adding a bit of paprika .
Season with salt and pepper to taste.
Serve:
Serve the Chicken Cacciatora alongside the Butter Bean Mash and Button Champignons.

More and more young workers are choosing to freelance instead of locking themselves into a cubicle job they hate. And honestly? I get it. Let’s talk about why this shift is happening, what it really looks like, and whether freelancing is actually better than a “safe” full-time gig.
Why Gen Z Loves Freelancing
1. Freedom Over Everything Gen Z grew up online. We saw the rise of remote work, digital nomads, and creators making a living from their bedrooms. So why stick to rigid hours and an office?
2. No Trust in ‘Job Security’ 2020 showed us all how fragile jobs really are. Layoffs, hiring freezes, burnout… who wants to put all their eggs in one company’s basket?
3. Passion Projects & Side Hustles Gen Z wants meaning. They’re more likely to freelance so they can work on multiple things they care about, and keep learning along the way.
4. Tech Makes It Easy Platforms like Fiverr, Upwork, and LinkedIn make it easier than ever to find freelance gigs, clients, and communities. You don’t need to cold-call or door-knock. Just send that portfolio link!
The Good & The Not-So-Good
Pros: Total control over your schedule Choose who you work with Multiple streams of income No commuting (hello, sweatpants life!)
Cons: No guaranteed paycheck You’re your own accountant (taxes, bleh) Hustle culture can creep in, balance is key It can get lonely without a team
My Take?
I freelanced in college and after graduation. Some months were feast, some famine. But the skills, the freedom, the connections, I wouldn’t trade it.
The biggest thing? Freelancing teaches you to bet on yourself. To build your brand, your network, and your portfolio, instead of relying on a single employer’s promise.
So, Should You Try It?
If you’re curious, start small! Pick up freelance gigs on the side of your 9–5. Try writing, design, social media management, whatever lights you up. You’ll build your confidence, income, and skills while keeping your safety net.
Who knows, you might just love it so much that you become the boss.

let me vent/complain for a bit. I need help.
I am in a pretty bad spot right now. I've been in it for quite some time to be honest.
Most of you probably know that I'm trans, and living with my parents feel like living in a damn prison especially since I know I won’t be able to transition if I stay there.
So I need to leave.
Now that I'm 18 most things have been put in my name, I almost have my driver's licence and I'm saving up for a car so soon, I'll be able to leave.
Problem is, I don’t nearly have enough money to do it. I work two jobs but both are minimum wadge and don’t give me enough hours.
I'll probably find somewhere where I can work as a stable-hand in exchange for a place to stay so I'd be able to affort food/water/electricity as well as care for my dog and horse.
I'll probably have to give up my hopes of getting higher education and get a diploma in horse care but that’s fine, I'll figure something out.
Anyway, in the meantime because I need to save up money, like a lot, I was wondering if anyone as any idea of side gigs or whatever to make some extra money that would be worth it? I already tried selling art commissions but unfortunately no one seems to be interested which I understand, money is hard for everyone these days.
I'll be moving anyway next year but I'd like to be able to move before that even if it’s hard.
