The way he looks at Syd here. I found it extremely interesting and back then I understood it a certain way but now that I have the whole context, meaning I have finished watching season 3...well I see it in a totally different light. Okay this might be a bit long one but here me out.

At first, I thought Carmy was mad. They were in the rush of service and some plates took longer than necessary to be ready and so he was in his full-asshole Chef mode, running expo in a way that was cold and stressing. I thought he was simply angry because Sydney went to help Tina with the pasta cooking/plating. 
I still think he is mad but with the events in the following episodes, I believe it is way more than that, I think it is much deeper than I expected it to be and I might be reading into this too much but I made another meta and I feel like I cannot speak about this scene without bringing the Carmy scene at Ever in 3x10. 
Now, I think Carmy is jealous. I believe he is impressed. He is mad. He is so fucking envious. He is scared, petrified even. Carmy is in awe and quite astonished. 
That is how I see it now.
The thing is Sydney is portrayed as being impatient, and sure she might have shown some signs of being so regarding certain aspects but when it comes to cooking, when it comes to leading a team, when it comes to being the Chef of cuisine, when it is about running her kitchen, her cooks, she is patient. 
Sydney is patient and calm and pedagogue. She is willing to repeat, to assist and to help. She does not shout, she does not squeeze you even more into the panic of the kitchen even if the situation pleads her to do so. Sydney is loving, caring and fulfilling. She brings back your confidence up, she highlights your strengths, she shows that she trusts you. Sydney is willing to wait, repeat and assist you without doing it all for you even under the humongous pressure of time and peak service. She provides the tools, shows you how to use them in the most efficient way and lets you do it, her hand ready to chime in if needed, if you ask for it. Essentialy, she's a humonguous talented force that whispers you that you can do it. You can do it, Tina. You can do it, Marcus. You can do it.
We saw that during season 1. We saw that again during season 2. She is special, she is something. We saw that once more during season 3, more precisely with Tina, taking the seconds necessary to show her multiple times how to properly cook the pasta and plate it correctly even under the pressure of service. She sets aside her work and helps, guiding Tina with utmost care. She was annoyed too. She was stressed. It was in the middle of service, it delayed everything but Sydney still helped. 
And what did Carmy do in those specific instances? 
He shouted. He was cold, destroying Tina’s confidence, spitting deprecating comments. He did not help. He did not love. He did not care. Sure, he’s under pressure but Sydney is too and yet Sydney stopped and went to Tina, she understood her distress, she felt her silent cry of help and crossed the kitchen to her, steadying Tina again, calmly, without harsh words, without being a total prick even if the situation was nerve-wracking. 
Carmy saw that. He looked at that interaction, watched Sydney be a teacher, a pedagogue, he saw Sydney be the Chef he is not. The Chef he probably never will be. He gazed at something that he does not know how to do, at something he did not even think possible in a kitchen. 
He looked at it and was mad, impressed, envious and solemn. He looked at Sydney as if she is special, as if this is special and something. Something that was worth taking a few seconds to stop, to see and take in. The few seconds he pointedly declared they did not have to Tina.
That is something.

definitely one of the best things the bear has done was equate claire to chef david and sydney to chef terry bc it makes it so much more obvious where they're going to go with the story - even though claire and syd have "ambiguous" roles of who is better in carmy's life (even if it's extremely obvious to us who is), the juxtaposition btwn chef david and chef terry is so stark and obvious to everyone about who's better it's not even funny 😭
they even gave sydney and chef terry matching headbands btw LMAO

the fact that they also had the guy who physically got carmy out of the fridge be named terry as well, while chef terry's talk to him in s3e10 was what got him partially out of the fridge mentally is... wild to say the least. making the conscious effort to name the characters like that was definitely a choice
also sydney waiting for him by the door after he got out when claire left while he was still in it? that's some delicious storytelling right there

while I agree that the cast and writers of the bear play way too much in our faces about sydcarmy, it honestly blows my mind how a good number of viewers don’t stop to savor the EXPLICITLY romantic storytelling beats between these two:
- the bear, the SHOW, starts the day Sydney comes to the restaurant. Not the day carmy comes back. The day SYDNEY appears to stage.
- the many many many MANY MANY parallels between the two. After s3 there’s too many to list here, but oh boy…
- the beat that the camera takes after syd asks “who’s Claire?�� when nat first brings her up. That beat is meant to portend something bad (aka one of syd’s main conflicts in the season with getting carmy’s full focus).
- the music. Oohhhhhh god the music. I’ll tell ya, there’s tons of songs about friendship and family or whatever. They’re not using those songs for Carmen and Sydney.
- the red dish of fate that connects the two???? The fact that carmy couldn’t bear to send out another dish the way he was told to and send out what HE thinks is right? AND IT’S SYDNEY’S FAVORITE MEAL? bye
- the fact that sydney literally brings him down from a panic attack, TWICE. carmy is spiraling and the thought of claire is making it worse (and strange currencies is playing in reverse and chopped up) but the THOUGHT of Sydney is enough to bring him back (and strange currencies plays correctly)?? I’m so sorry but that’s some shojo manga-level shit. the contrast between the trauma of his past (his family, and Claire being connected to that), and the golden promise of his future (Sydney). It’s almost unbearably romantic.
- them talking quietly under the table with Pearl Jam’s “come back” playing in the background. if I think about this one too long I’ll combust.
- the fact that carm has (unconsciously) made his dish look like Sydney’s scarf in s3 e9????? like she is his MUSE you all can stay mad abt it.
my position has always been that the actual storytelling has always been romantic for these two. It’s in a subtler than what’s on other tv shows, sure. you can’t deny that there is TONS of platonic love on the bear. Sydney and carmy’s bond stands out simply because it’s presented differently from those examples of platonic love.
And this isn’t even an exhaustive list!!!!!! The bear writers I’m in your WALLS!!!!

yes im having conflicting thoughts abt the bear s3 just like everyone else and their mothers and no i dont think that sydcarmy can exist as they are now BUT to be loved is to be known and sydney literally reprinted the tickets with wider margins solely because she noticed and knows that carmy likes to write in them. so. tell me how i’m supposed to jump ship when such a simple moment says so much about how good they can be?????

since the first seasons monologue carmy says: And the more people I cut out, the quieter my life got. And the routine of the kitchen was so consistent and exacting and busy and hard and alive, and I lost track of time, and he died.
and we saw him repeat that exact same pattern, reliving his trauma at EMP, turning into David and losing his connection to his family and friends.
the scene with David and Terry were definitely the turning points.
carmy’s always running out of time
i just need to get this out of my head once and for all.
i don’t know if someone has already mentioned this, but time is a recurring issue for carmy this season. He often feels like he’s behind schedule or something.
watching it for the first time i didn’t notice carmy’s mention to time until i got to the syd and carmy scene in episode 9., so i decided to rewatch just to catch every time he mentions it throughout the season.

so he’s reasoning to stop smoking was time, not health. it was the means to get to the end goal (get the star, not let the team alone) he wants to stay sharp and focused and he can’t waste five minutes on a cig break. so he gets the nicotine tablets instead.
(just a side note: ijbol every time his speech was compromised by the damn tablets I couldn’t take him seriously when he was fighting to not spit that thing out. i also wanted to smack that shit out of his mouth so many times)
not smoking leaves him impatient and more sassy than ever, and I can’t help but to trace a parallel line between not smoking and his sudden bursts of anger (him telling nat to figure out the money thing and stomping out of the office)
when sugar comes in she asks him why is he doing all that for, his answer is straight forward:

we see the first glimpse of the carmy we’re gonna see for the rest of the season: impatient, anxious and snippy.
in episode 3, doors, when richie comes up with his own non-negotiables list, he gets angry and defensive that someone would try and challenge his ideas. but he doesn’t have time to explain why cause he’s running out of time. He doesn’t even want to listen, cause he’s running out of time.

in episode 5, children, uncle jimmy brings the computer to run an analysis on the restaurant finances and things aren’t looking too good, but carmy, once again, refuses to listen, he just wants to get back to work and block all noise

it gets to the point jimmy has to pull him aside cause he’s being so annoying about it.
then we have episode 7, legacy, where we have this:

this scene, once again, reinforces the idea of him always getting ahead on the next thing, never really enjoying the moment he’s in cause he has a job to do.
he barely lets sydney finishes her sentences, he already has everything mapped out in his head and thinks he doesn’t need to let her in the loop. he never slows down, is go go go time in his mind.
every second counts.
then finally, episode 9, apologies, where he apologizes to syd, he’s tired of always getting ahead, he wants to do differently:

she’s the only person he apologizes for constantly pushing for time and making her constantly having to play catch up.
as sydney states, it wasn’t a skill issue, but communication, something that she told him before and he didn’t listen. he never enjoyed the moment.
it made me think of when sydney asked him in episode 5 if he knew what he had was special when he was working under chef terry and he said he was always too busy to know it at the time.
now that he’s faced with ever closing, a place he thought it would last forever, I think he’s ready to admit that he doesn’t have to run anymore, he needs to stay in the moment.
(now this is just crack but this is so non-stop by hamilton coded lmfao
the man thinks he’s Alexander Hamilton writing the other 51 confederalist papers, assuming he’s the smartest in the room and that attitude will be his doom, sorry for the ref)
