For The Love of Snacks & Geeky Things
This spicy snack is inspired by the book I’m currently reading, Dangerous Women, a volume of 21 short stories from various authors. This snack represents the hodgepodge of female pro- & antagonists. There’s spicy roasted chickpeas, sweet dried pineapple, bittersweet dark chocolate & cranberries, fresh apple, and the wild card, lightly salted dried plantains.
Some flavors are strange, some familiar, all are exciting.
Here’s the recipe:
Ingredients: 1 15 oz can of chickpeas; 1 tbsp olive oil;  spice blend (1 tsp ground cumin, 1 tsp chili powder, 1/2 tsp cayenne pepper, 1/4 tsp curry powder, 1/4 tsp salt); 1/4 cup dried pineapple chunks; 1/4 cup dark chocolate chips; 1/4 cup dried cranberries; 1/2 apple (cut into bit-size pieces); 1/4 cup lightly salted dried plantain chips (broken into smaller pieces)
To roast the chickpeas preheat oven to 400 F. Drain, rinse, and dry chickpeas (remove skins if desired). Toss chickpeas in a bowl with olive oil and spice blend. Spread out chickpeas on baking sheet. Bake for 30-40 mins, tossing half way through. Let cool for ~10 mins.
Add roasted chickpeas to bowl with pineapple, dark chocolate, dried cranberries, apple, and plantain chips.
Enjoy!
FYI: this recipe is easy to customize. Feel inspired to add your own ingredients & spices!
