Local Review
Good food and coffee, in equal measure, is the promise of The Premises. Delivery is assured by the partnership between chef Kate Holloway and barista Alex Anderson. Both are recognised as veterans of Melbourne’s coffee industry.
The cafe is not quite on the corner of the street – it takes up a lovely shaped space that nestles on either side of the corner shop. The cafe is furnished with old school desks and what looked to be reclaimed furniture (although most of which I believe was made by the owners dad!) The colour theme is green – the tiles and lamps and chairs are all a beautiful emerald green.
A mix of concrete, brick and timber aesthetics give The Premises its eclectic style, while red-splashed walls and forest-green tiles add amiable warmth. Personality exudes through an assortment of furnishings, which include old timber school desks (reincarnated as coffee tables) and green enamel lampshades sourced from a tennis court in Benalla.
Holloway’s team turns out sophisticated café fare like the creamed corn, fried free-range egg and cumin salt on multigrain toast with locally smoked bacon and the slow roasted Pulled Pork with a mustard slaw, spiced roasted apple and dill pickle. Jams, chutneys, preserves and sauces are all homemade from quality ingredients sourced locally where possible. Equally compelling is the Seven Seeds coffee: an espresso blend and single origin/guest espresso served daily by Anderson’s team of accomplished baristas.
Balance seems to be the overriding theme: “we’re stripping things back a bit, not trying to geek out too much but to provide a quality, consistent product.”
