It flowers late in the season, and its pollen provides an important source of protein for bees as they head into the harshness of winter… [Ziska & co.] found that the protein content of goldenrod pollen has declined by a third since the industrial revolution—and the change closely tracks with the rise in CO2. Scientists have been trying to figure out why bee populations around the world have been in decline, which threatens many crops that rely on bees for pollination. Ziska’s paper suggested that a decline in protein prior to winter could be an additional factor making it hard for bees to survive other stressors.“ the whole article is depressing and important but this part was sort of poignant to me because it’s a reminder that beyond active destruction of habitat and widespread use of pesticides/insecticides industrial civilization is still killing wildlife.

Made last night. Used a standard bechemel, fresh basil, salt and pepper. Was very good. 2 Lebanese eggplants 2 Zucchini 1 Onion 2 Med tomatoes 2 green Capsicim 5 small mushrooms Sauté sliced onion and capsicum until brown, with chopped handful of basil/ parsley. Slice eggplant, zucchini, tomato, mushroom. Line base of oven dish with onion + Capsicum. Layer eggplant, Zucchini, tomato mushroom. Top with cheese, bechemel or alternative. I used about 2 cups of bechemel.
