Zi Qian Zhang is an established Fall River, Massachusetts entrepreneur who maintains a commercial portfolio as head of JZ Real Estate. Cooking a Classic Bitter Melon and Egg Stir Fry in the Wok

The bitter melon or bitter gourd, a long green-skinned vegetable, features bumpy skin. High in antioxidants and polyphenols, which help reduce inflammation, it thrives in humid climates. Inside the bitter melon, a white pith contains seeds that individuals can scrape out before cutting into bite-sized pieces and cooking in dishes, such as the Chinese stir-fried bitter melon with eggs.
Start by bringing boiling water and a dash of salt. Then, immerse the cut bitter melon in the water, blanching it for no more than 30 seconds. Next, beat eggs with salt, sesame oil, and white pepper.
Heat a wok until it lightly smokes, and add a dash of sesame oil, immediately followed by the beaten eggs. Scramble the mixture for less than a minute, avoid cooking it thoroughly, and set it aside. Add more oil and stir fry the bitter melon for around a half minute with some cooking wine, such as Shaoxing. Then, add oyster sauce, soy sauce, and a dash of sugar.
Finally, combine the eggs with the bitter melon and remove the heat when the mixture is no longer runny. Serve freshly off the wok to obtain the best flavor.
