I ad libbed for dinner tonight with a shrimp scampi recipe I've made before, except we used tortellini, chicken, and added spinach! It's very good. Will make again. How are you, my friend? How was your weekend? Sending hugs 🫂

oh my goooood Mac that looks so good??? I love a good tortellini!?!? (for someone who loves it so much I sure don't eat enough of it haha). I love to repurpose recipes into something else!! (Also that picture looks like something off of a food blog or in a cookbook!)

I've been doing alright! Spent a good portion of the weekend looking after the Sick Boy, but he's better now and back to school like usual! I'm very tired though and unsure if it's because I woke up an hour and a half before my alarm or if it's because he's given me his ick (I now have a sore throat I didn't have a couple days ago haha)

I'm hoping for a good week this week, filled with good food and good times ☺️

Today has been an okay Monday so far, thankfully. I'm working through getting some estimates out to our clients for service renewals, though I did find out this morning that we're down a tech again because the tech we hired right before we just hired the new guy last week, decided to take a job somewhere else.

One day we'll be a full crew of 3 techs again haha.
