Gellan gum is a viscous soluble fiber, which is produced by the bacteria, Sphingomonas elodea, from corn starch (glucose) or cheese whey (lactose). Gellan gum is a mixture of several polysaccharides composed of glucuronic acid, glucose, and rhamnose. Gellan gum is used as a gelling agent, food additive, and has application in bakery and confectionary products.
