7. How do you choose which POV to write from?
This all depends on what you're trying to accomplish. There was a post going around recently about how you should choose the person with the least amount of information. The Locked Tomb series utilizes this one, coming up with new reasons every book for the protagonist to be completely ignorant of the world she lives in. It keeps the mystery up and thus keeps the reader guessing and involved.
Fanfic is more frequently focused on the relationships between characters, so rather than mystery, the goal is often to see development. The POV is frequently from whoever is finding the moment more meaningful. Agua Caliente from Zagreus's POV would be a lot of Achilles staring into space and then wandering off somewhere, which actually sounds kind of fun to write now that I said that, but is a totally different vibe.
Other tactics include who would be the funniest person for the scene, either because they don't care about what's going on at all, or they don't understand what's going on, or they are in their own story right now and the goings on the audience cares about are completely peripheral to their life... lots of goofy reasons to make someone a shitty/funny narrator. In ensemble fics like Void, it helped keep the scenes fresh for me, too. Writing the big family dinner scene felt very boring to me until I made the most oblivious dumbass in the room take the reins (Thanks, Poseidon).

I answered this already, but I should add I have some prompts that I'm planning on combining with Patrochilles Week Prompts and I'm hoping to get a couple one-shots down for that event =)
