Blooming – what is it?
The bloom is caused by the roasting procedure. Whenever all types of organic material are heated, chemicals – carbon dioxide in particular – are discharged. A soon as the beans are ground, the trapped gases are discharged much more quickly. Moreover, when hot water touches the coffee grounds, they immediately purge themselves of the carbon dioxide and create the “bloom.” If will not have water enough space the extraction will much more weak. With pouring and sacking coffee grinds with the smaller amount of water we let enough space to get the gas faster away. Once we will pour more water and grains will be under water, the gas can stock and get out slower.
So try don’t add a lot water, that your coffee grains will more than 1mm under water. More freshly roasted coffee more oxygen in.

Blooming process
The blooming process is one of the more important processes of the coffee preparation. The main reason is that this time one starts the first relation/connection between the water and the coffee grains. Also, this time you start to create the flavours.
The important part of the process has to do with the correct ratio between extracted elements of water and coffee. You have a couple option to do this:
1. Follow a recommended recipe for the particular coffee beans.
2. Create your own recipe and follow the coffee beans process, the quality, the roasting level, and consider the age of the coffee beans.
3. Use instincts, like the smell, sight and also listen. More in the section “Instinct coffee”
Many recipes and expert opinions inspire me. However, instead of just copying existing recipes, I love to experiment and use my instincts and senses to explore new aspects of the coffee and to create new recipes and coffee moments that inspire me.

What is most important with coffee brewing
I would say everything. All the processes are important. Hard to tell which one is most important. But I have tried to analyze, and in my opinion, these are the most important things:
Hario preparation
Plan what you want to do.
Kettle – I put it on first because you need hot water. Water is approximately 95% of the coffee. If you know how to pour the water, you can play with the flavours of the coffee. If the kettle is not comfortable in your hand, or if it is not stable in your hand, the stream of water will not be consistent, and you can, for example, splash smaller and lighter parts of the coffee grains to the middle of the dripper and block it.

Grinder – With a cheap grinder you can get a variety of grinds so that each cup of coffee from the same coffee beans can be different.

Water – I have found many times in different locations that there is a very big difference in the quality of the coffee.
Finally, to get to the point, what many people will get at the beginning are coffee beans. With coffee brewing, quality and freshness of the coffee beans are very important. It is best is use coffee beans rated around 88% and more, and not older than 4 weeks after roasting.
Filter – Don’t use cheap paper filters for good coffee beans. Use the best, or rather don’t use it at all.
Coffee dripper for heat stability is best used in ceramic or glass. Plastic is good when traveling, the same thing with steel, but they can have the bad aftertaste.
.Server – Decanter or jar is the best as they cool down coffee temperature faster. I prefer the glass one because you can see the colour of the coffee as it drops into the decanter.

The timer and scale can help a lot as you don’t need to follow two different displays.
Your environment is very important, where you prepare the coffee, somewhere where you will feel good and comfortable. It depends on your personality.

THE CENTRAL HIGHLANDS AROUND DA LAT LA COFFEE PARADISE
The central highlands of Vietnam offer ideal conditions for the cultivation of high-grade Arabica coffee beans. French colonialists introduced Arabica coffee beans to Vietnam in the 1800s. In the 1990s, when the country’s agricultural land was controlled by the Vietnamese government, the establishment of Robusta coffee plantations was promoted in the Central Highlands. Arabica trees were cut down and replaced with high-yield and more resistant Robusta trees. As a result, the country is the largest producer of Robusta coffee today. Vietnamese Robusta beans are most often used in blends and as instant coffee.

TARRAZU
We rented a car for 1 week and explored the Tarrazu region, which is located in the Central Highlands of Costa Rica. This area is a gourmet coffee growing center of the country and a mecca for coffee-lovers. While driving through the highlands and valleys, we passed many coffee fields. We saw quiet mountain towns surrounded by spectacular mountains, which are completely covered with shiny-leafed coffee bushes.

We had been invited to visit the coffee farm of Senior Fernando Navarro Valverde, which is located in San Francisco/San Marcos de Tarrazu. His coffee plantation is about 1 hour away from Cartago, Costa Ricas first city and original capital founded in 1563.
On the farm
The coffee plantation of Senior Navarro Valverde is a paradise! It is not only a coffee plantation, but it is also a botanical garden with many animals and a beautiful waterfall. Whenever he needs to make an important decision, as he told us, he walks down to a quiet place with tropical flowers, right next to the waterfall.
We also visited the coffee plantation and house of his charismatic brother. At his house, he showed us big bags filled with coffee. With a big smile on his face, he took both of his hands and filled them with coffee beans. Slowly he put his nose into the coffee beans. And for about half a minute he was breathing in the magic aroma of Tarrazu. He encouraged us to do the same. It was an experience, which we will never forget! We experienced it for the first time. He is experiencing it every day.

Later on, both brothers introduced us to their friendly family. We met their wise, hardworking 73-year-old father. He is working on their coffee plantations every day for 8 hours with passion. No matter how wet or hot it is. The sons are proud of him. Everything important, what they know about coffee-culture, they learned from him. To honor their father, they sell their coffee in bags, which are decorated with a nice picture of their father.
We are very thankful that we had the opportunity to visit this wonderful family!

Last but not least, enjoying a cup of coffee stands for the cultivation of mindfulness by taking time to discover what isn’t obvious.

The charming and picturesque town Bajawa is located in the central highlands of the snake-shaped island of Flores, Indonesia. It’s the capital of the Ngada Regency, which is part of the East Nusa Tenggara province.
The landscape around Bajawa is incredible with a spectacular, unforgettable volcanic scenery, including the highest volcano of the island: Gunung Inerie (2245m). It’s name is derived from the words “Ine” and “Rie” meaning mother and beautiful.

The name of Bajawa comes from “Bhajawa”, which literally means Plate of Peace (“bha” meaning plate and “jawa” meaning peace.) Bajawa is the name of one of the seven traditional villages on the west side of Bajawa town, which had been established by Dutch colonists in 1907. The the other six villages are Bongiso, Bokua, Boseka, Pigasina, Boripo and Wakomenge.

Light and transparency are some of the main features of La Viet. The high and open space of the innovative coffee shop is surrounded by glass walls, allowing passers-by to see what’s going on inside. Glass walls also surround the roaster and workshop inside the building. Pipelines are visible across the walls; they remind the guests that they are drinking their coffee in a place, which is also a factory. Guests mingle around a long wooden table around the coffee bar and enjoy watching the baristas, how they mindfully prepare and serve freshly roasted single origin espresso or filter coffees using various pour-over methods or the AeroPress. La Viet is a new, fresh and one-of-a-kind venue in Da Lat. The coffee shop stands out for its unusual concept and design and is revolutionizing the local coffee scene in Vietnam. Quang Tran and his team are building a supply chain for local quality beans.
They cooperate closely with farmers who own small coffee plantations in the outskirts of Da Lat. It is their aim to create a support framework to empower farmers so that they are fully equipped with the vital skills required to cultivate and process high-quality Arabica coffee beans. THE CENTRAL HIGHLANDS AROUND DA LAT: A COFFEE PARADISE
The central highlands of Vietnam offer ideal conditions for the cultivation of high-grade Arabica coffee beans. French colonialists introduced Arabica coffee beans to Vietnam in the 1800s. In the 1990s, when the country’s agricultural land was controlled by the Vietnamese government, the establishment of Robusta coffee plantations was promoted in the Central Highlands. Arabica trees were cut down and replaced with high-yield and more resistant Robusta trees. As a result, the country is the largest producer of Robusta coffee today. Vietnamese Robusta beans are most often used in blends and as instant coffee.
Less than 5% of Vietnam’s crop are Arabica beans. Nowadays it is unlikely to find Vietnamese Arabica beans in specialty coffee shops around the world. Quang Tran and his team are aware of this. They are passionate about their local Arabica beans and make it their priority to promote specialty coffee culture in Vietnam and beyond. “The best coffee in Vietnam can be found in the mountain paradise around Da Lat”, says Quang Tran.
Local specialty coffee still has to find approval in Vietnam. Up until now, not many Vietnamese coffee-lovers came to La Viet. Most of their guests, as Quang Tran points out, are either foreigners or locals who really love coffee. Quang Tran and his crew believe that Vietnamese people are not ready yet for specialty coffee. The La Viet team has the ambitious goal to change the way Vietnamese people think about coffee. They not only organize tours to coffee plantations, but they also hold open tasting events of recent harvests in their roasting lab.
The La Viet crew is ready to share their passion in cultivating, processing, roasting, preparing and enjoying specialty coffee. They want to introduce their guests to flavours that are like nothing they had ever tasted in coffee before. Baristas are ready to educate their guests about all the different factors that makes coffee taste the way it does. The owners want to teach people that each bean from each growing region releases its own unique flavours..

Like last year, I didn’t focus on bigger or more known coffee shops, but on smaller. On coffee-shops run by highly passionate owners, who are happy to talk to you about coffee.
Here are our 10 favorite ones for 2018, many of them are same. But some I have to add the new one.

This is a small, charming air-conditioned coffee shop located within 10 minutes walking time from the Old Town. Look around this interesting space and be inspired! The friendly barista has a big passion for art. He loves coffee and photography and also displays a few vintage cameras in his shop. He prepares excellent pour-over and espresso-based drinks. Ama translates to “mother” in the Akha language. The name of this coffee shop is dedicated to a mother, living in the Akha village of Maejantai, who motivated the people of her village to cultivate and market their own coffee beans. In 2010, members of the Akha community established the ‘Akha Ama Cafe’ in Chiang Mai to promote their specialty coffee.
