Ginger miso ice cream is a unique mix of sweet and savory tastes. The mild heat of the ginger goes well with the umami richness of the miso. In a delicious way, this creamy treat is different from regular ice cream.
Ingredients: 1 cup heavy cream. 1 cup whole milk. 1/2 cup granulated sugar. 3 tablespoons white miso paste. 1 tablespoon grated fresh ginger. 4 large egg yolks.
Instructions: In a saucepan, combine heavy cream, whole milk, and sugar over medium heat. Stir until sugar dissolves and mixture is warm. Whisk in miso paste and grated ginger until fully combined. In a separate bowl, whisk egg yolks. Gradually pour the warm cream mixture into the yolks, whisking constantly to prevent scrambling. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens enough to coat the back of a spoon. Remove from heat and strain through a fine mesh sieve into a clean bowl. Cover and refrigerate until thoroughly chilled, preferably overnight. Churn the chilled mixture in an ice cream maker according to manufacturer's instructions. Transfer churned ice cream to a container and freeze until firm, usually about 4 hours or overnight.

You can make Crispy Kung Pao Cauliflower instead of the traditional Chinese takeout dish Kung Pao Chicken. To make cauliflower florets, coat them in a crispy cornstarch coating. Bake them until they're done, then toss them in a sweet and savory kung pao sauce.
Ingredients: 1 medium cauliflower, cut into florets. 1/2 cup cornstarch. 1/4 cup soy sauce. 3 tablespoons maple syrup. 2 tablespoons rice vinegar. 2 tablespoons vegetable oil. 3 cloves garlic, minced. 1 tablespoon fresh ginger, minced. 1/4 teaspoon red pepper flakes. 1/2 cup roasted peanuts. 3-4 green onions, chopped. Sesame seeds for garnish optional.
Instructions: Preheat the oven to 425F 220C. In a large bowl, toss cauliflower florets with cornstarch until evenly coated. Spread the cauliflower on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until cauliflower is crispy and golden brown. In a small bowl, whisk together soy sauce, maple syrup, and rice vinegar to make the sauce. Heat vegetable oil in a skillet over medium heat. Add garlic, ginger, and red pepper flakes, and saut for 1-2 minutes until fragrant. Add the roasted peanuts and sauce to the skillet, stirring to combine. Once the cauliflower is done, transfer it to the skillet with the sauce. Stir well to coat the cauliflower evenly with the sauce. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly. Garnish with chopped green onions and sesame seeds if desired. Serve hot over rice or noodles. Enjoy!
