Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 2 tsp lemon zest. 1/4 cup fresh lemon juice. 1/2 cup whole milk. 1 tsp vanilla extract. For Cream Cheese Frosting:. 8 oz cream cheese, softened. 1/2 cup unsalted butter, softened. 4 cups powdered sugar. 1 tsp vanilla extract. 1 tbsp fresh lemon juice. Additional lemon zest for garnish optional.
Instructions: Warm up your oven to 350F 175C and put cupcake liners in a muffin tin. Whisk the flour, baking powder, and salt together in a bowl. Put away. Melt the butter and mix it with the sugar in another bowl until the mixture is light and fluffy. One at a time, add the eggs and beat well after each one. Add the lemon juice and zest and mix well. Slowly add the dry ingredients to the wet ones, mixing them in with the milk every so often. Start with the dry ingredients and end with the milk. Don't mix any further than that. Add the vanilla extract and mix well. Fill each of the cupcake liners about two-thirds of the way to the top with cupcake batter. In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. For a few minutes, let the cupcakes cool in the muffin tin. Then, move them to a wire rack to cool completely. Melt the cream cheese and butter together. Then, beat them together until the frosting is smooth and creamy. Add the powdered sugar, vanilla extract, and fresh lemon juice one tablespoon at a time. Beat until everything is well mixed and fluffy. Use a piping bag or a spatula to frost the cupcakes with the cream cheese frosting once they are completely cool. If you want, you can add more lemon zest as a garnish. Mix well after adding the vanilla extract and a pinch of salt. Mix the all-purpose flour in slowly with the wet ingredients until a dough forms. Add the chopped dried strawberries to the dough and mix them in. Make a small ball of dough and press it down in your palm. Put some strawberry jam in the middle of the dough, and then fold it around the jam to make a ball. Do it again with the rest of the dough. Leave some space between the cookie balls when you put them on the baking sheet that has been prepared. After the oven is hot, bake the cookies for 12 to 15 minutes, or until the edges are just beginning to turn golden. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way down.
