This dish is absolutely bursting with flavours that most of us know really well. It can be prepped at home and then when the time comes can be fired on to the BBQ. I have done my chilli mince on my barbie using Dutch oven. I finished stuffed peppers directly on the grill to cook the peppers from the bottom. I kept the lid down to create oven like environment to make the crust crispy.

My recipe of this popular BBQ dish is quite simple. What I wanted to achieve, was a juicy and full of flavour healthy chicken burger. I wanted to stay away from usual mayo or bbq sauces and cheese. This burger is bursting with many flavours. Served in a wholemeal bap chicken fillet was smoothered with garlic and basil oil. *Roasted chermoula cod on a harrissa cauliflower steak* I tried to keep it simple....I ve tried as much as I could :) Considering that I ve done my harrisa paste from scratch this can be bought in to make things easier. Chermoula is a just a blend of herbs, lemon juice, olive oil, garlic, cumin and coriander. Cauliflower steak was brushed with harrisa paste then grilled from both sides on on BBQ ( direct heat) then roasted with the lid down (in direct heat). After 10 minutes of roasting I placed cod fillet on top of cauliflower. Cod was brushed with chermoula multiple times and roasted for another 20 min on medium (in direct) heat. Great trip to Rostrevor (county Down) NI to experience as always chalenging 30 km MTB trial. Its a MUST for me, at least twice a year to go there. The trial starts with the big climb that breaks most of the people. The magnificant views are rewarding but it doesn't get any easier after that š„š„š„. I've learned lesson as well... I guess I could call this one š„©Asian steak saladš„. Its a result of me going thru the fridge and using whats left there. When the fridge is empty I usualy need to think harder to come up with something interesting.. With a little bit of effort putting in to it, it always works better for me. On the other side I always try to keep my dry goods stocked up really well. I like to have that arsenal loaded up. It really helps on ocassions like this. Pan roasted salmon with red lentil pasta, green pesto sauce and roastedĀ fennel


300 g salmon
170 g lentil pasta
2 fennel
50 g spinach
20 g pine nuts
1 clove garlic
15 ml olive oil (plus extra to brush the fennel)
20 g parmesan
1 squeeze lemon
1 sprig basil
1 pinch salt
1 pinch black pepper
1 tbsp rapeseed oil
1 pinch ground nutmeg
