A day of prep. Dry rub made for my wings, a herb bundle put together to make the brine along with a spice bag. Chicken wings will sit in the brine for 2 hours then go in the rub and then they’ll be smoked for a couple of hours. Then fried and tossed in a jalapeño, lime and apricot preserve sauce. Delicious!
