Work lunch this week is this veggie-packed and beautiful cauliflower rice dish.
I’m on a never-ending quest to try to eat more vegetables and less processed carbs, so packing my whole lunch full of veggies makes that a lot easier.
To make this, I just sautéed a ton of peppers and onions with minced garlic then when those were cooked down I added a bag of cauliflower rice from Trader Joe’s, some chili lime seasoning, and some frozen roasted corn. Finally when it was almost cooked I added a bit of buffalo sauce and a can of drained and rinsed black beans.
Even though I’ve technically finished the challenge, this meal is totally compliant. I plan to stick to no added sugar as much as I can except for a daily bit of chocolate.

A big breakfast to close out the sugar challenge. Two scrambled eggs with Trader Joe's soy chorizo, hot sauce, avocado, and sliced red pepper. Tonight I'll definitely be having some ice cream but other than that I'm going to try to stick to no added sugar as much as possible. Soon I'll be posting a progress update with all my thoughts on 30 days of no added sugar.

Last full week of the no added sugar challenge and for my work lunches I made buffalo tofu which I'll be having in whole wheat pitas with mushrooms, red peppers, and of course extra buffalo sauce. The challenge is going really well, and I can't believe it's almost over. As soon as it's been 30 days I'll definitely be having some chocolate, but other than that I think I'm going to keep this up as long as I can. I'm going to try to eat as clean as possible this week to really get the best results from my challenge, so I'll try to limit my processed carbs and eat tons of veggies. Looking forward to an update post next week with my results :)

Breakfast and a quick update. I made a simple sweet potato hash with green peppers and onions topped with one egg and lots of hot sauce. Guys, it was sooo good. It's been a little over two weeks without added sugar and honestly I feel great. I'm so much less tired and I'm not constantly hungry, which is really impressive because I've spent my whole life being hungry two hours after a meal. Not having much caffeine was rough, just because I can't stand black coffee and my beloved Diet Coke obviously has artificial sweetener. I'm definitely going to try to stick to no soda after the challenge is over, though I do think I'll go back to a bit of sugar in my coffee and honey in my tea. All in all I think I'm making habits that I'm going to stick to, just in a slightly less rigid way. My sugar cravings are pretty much totally gone, but I still miss chocolate, and after the challenge I'm definitely going to reincorporate chocolate into my life.

Meal prep for work this week is some yummy Tex Mex sweet potatoes with seasoned black beans, roasted corn, green peppers and onions, salsa, and a bit of sharp cheddar cheese with a side of broccoli topped with pico de gallo. Be on the lookout for an update on my progress after two weeks of no added sugar in the morning.

Sunday morning brunch was these delicious breakfast tacos made with scrambled eggs, roasted corn, fresh tomatoes and onions, lime juice, and of course lots of hot sauce on two corn tortillas. This was so good and super filling, and since not eating added sugar I noticed a really great sweetness in these tortillas.

First day at my new internship tomorrow! So naturally I had to pack my lunch tonight to get as much sleep as possible in the morning. I'm gonna have one longgg commute. I made this red lentil pasta salad with roasted Brussels sprouts, artichoke hearts, fire roasted diced tomatoes, white beans, and a bit of crumbled goat cheese. Tomorrow I'm going to stir in a bit of Greek dressing as well. Should be pretty tasty. Wish me luck on the big day, I'm super nervous!

After a long swim today, I had two pieces of Ezekiel bread for lunch, one topped with goat cheese and sun-dried tomatoes, the other with avocado, arugula, and a bit of balsamic vinaigrette. So delicious and super filling. Glad to be back on the no added sugar bandwagon after feeling soooo sick last night.

Okay I know they're not the prettiest, but these "cookies" were so so good! Just two mashed bananas, 2 cups of oats blended into a flour-like consistency, and I added a cup of frozen sweet cherries (that's where the interesting color comes from). I baked them at 350 for 15 minutes. The consistency is a little more chewy than a traditional cookie, but it was definitely sweet enough and super tasty.

For lunch I had this beautiful salad, that was honestly just a bunch of veggies I had lying around. A bed of chopped kale, roasted corn, black beans, red onion, tomato, artichoke hearts, half an avocado, and some of the no sugar/whole 30 ranch dressing I got this week.
Super tasty, and I haven’t really been craving sugar. But the lack of Diet Coke and sweet sweet aspartame running through my veins has been rough and I’ve had bad caffeine headaches. I’m hoping that those stop soon, and I can keep up drinking mostly water even after these 30 days.

For lunch I made some fresh pico for my spinach, red pepper, and low fat cheddar quesadilla. In order to pack extra spinach (and less cheese) into the quesadilla I cooked the spinach down first and added it to the tortilla after the cheese had melted. That’s also some plain Greek yogurt for dipping in place of sour cream.

I was really craving sugar this morning so I went a little fruit heavy on my overnight oats.
I made these with unsweetened coconut milk last night and this morning I topped them with wild blueberries and dark super sweet cherries. Both of the fruits came frozen from Trader Joe’s and didn’t have any additives.
Breakfast was tasty and helped with the sugar cravings but coffee with none of the artificial sweetener I love so much was a struggle.
