The average day at Pizza Joint begins long before opening at 11 am. The main opener arrives at 8 am to begin the bread dough and ensure it is ready hot and fresh by open. The next employee arrives at 9 am to begin the preparation and slicing of vegetables, deli meats + cheeses. Upon prepping vegetables there is also a prep list made for the 9 am employee with items needed before the work day begins. In most cases there will be small tasks such as egg salad, spaghetti, or kitchen peppers. This employee is beneficial as having them there ensures a good start to the work day fully stocked with the menu items. 10:30 am is when the employee in the pizza area arrives, leaving enough time to start a pizza to be sold per slice beginning at open. 
Doors unlock and phones turn on at 11 am. The full list of kitchen tasks is posted for employees working in the back. Throughout the day employees in the back complete the list with various menu items being made or cleaning tasks being accomplished alongside taking walk-in and phone call orders. The employees in the pizza area roll and toss dough, cook pizza and take walk-in and phone call orders as well. Once all kitchen tasks are completed the dishes are begun and kept on top of throughout the rest of the night. Starting at 7:30 phones are pulled, and Pizza Joint only takes walk-in orders. Closing tasks such as sweeping, mopping and trash removal are completed before close at 8 pm. After 8 pm the doors are locked, and all employees depart except the main closer who counts out and disburses the tips evenly based on hours worked. Lastly, they assure all closing tasks are completed correctly before leaving.

Menu Item Of The Week!

This week the menu item we will be dissecting and reviewing is the notorious Nightmare sandwich. This sandwich is one of the most ordered subs on our menu and a staple for Pizza Joint. To start this sub off we take a fresh sub roll and cut it down the middle starting with fresh: Lettuce, Onions, Green Peppers, Olive Oil on both sides, Salt, Pepper and Tomatoes on the bottom side, and Pickles on the top side. Next, we add the meats and cheese sliced every day, start it off with: American Salami and American Cheese, Capicola and Provolone, Genoa Salami and Mozzarella, and Ham and Swiss. (Customizations are available) After all the toppings are added the top side is assembled on top and brought over to the paper to be wrapped for the customer. 
Overall review of the Nightmare sandwich is 8/10. With 4 meats, 4 cheeses, fresh veggies, and delicious buttery bread though it may be hard to get your mouth around it is a mighty fine sandwich.
