Unfortunately there are no actual pictures of Theo that I know of but I think he's an orange tabby cat.

You can see a bit of his face on THIS video (minute 5:29) on the right corner next to the chair. You can also see his tail at some other points of the video but that's the most we've seen of him and the reason we even knew he existed :)
